A second look at our bulk herb department


Last month we wrote about our newlydoubled herb department, which now has hundreds of bulk seasonings, teas, cooking ingredients, medicinal herbs, rare exotic spices and 72 flavors of finishing salts. Weve had lots of excited and happy customers, but theyve also been surprised, because they said that our article and photo didnt really communicate what a huge abundance we have. So were giving you a second, wider-angle look. Remember that the world of flavorful, health-building plants is vast and has a history (and pre-history) intertwined with our own evolution. Not just mere flavorings, they have a life and a power that comes from the earth, not from a factory. Our herb department is just one corner of our store, but its a world you can get lost in. As we said last month, Andrew Jones, along with other members of the Real Food team are here to help you find that rare product youve been looking forwith plenty of options for side-trips along the way. You can also schedule a tour of our herb department or other areas of the store, such as our gluten-free selection. See page 3 for details. But whether or not your journey here is guided, remember to spice it up. Theres a world of flavor and a world of health awaiting you.

For example, unlike our newsletter, a web site can be any size, and the information wont disappear with this weeks recycling. Our monthly newsletter today is also printed on enough paper to reach McDonald Pass. If you want a printed piece, we hope to provide you one, but at the cost of fewer trees. Preventing Breast Cancer

Breast cancer is in the news on a daily basis, whether its the Komen Race for the Cure, Angelina Jolies preventive mastectomy or the latest research on dairy fat consumption in cancer survivors. One thing to keep in perspective is that, as with any disease, prevention is the ultimate prize, even though it may be less dramatic and heroic to avoid an enemy that may never attack. This month Dr. Christine Horner, MD, will give a talk on the subject. As a plastic surgeon Dr. Horner was largely responsible for making insurance coverage mandatory for reconstructive breast surgery in the 1990s. She has since devoted her work to prevention, and for that her book Waking the Warrior Goddess is a wide-ranging, wellgrounded guide. We think her talk will be well worth your time. There is no sure-fire way to prevent breast cancereven men can get itbut there are ways to improve the odds. Short of preventive mastectomy there are many natural diet and lifestyle choices you can make, from avoiding processed foods, synthetic chemicals and plastics; eating fresh fruits and vegetables; being physically active; cultivating a positive attitude and more. The great thing about making healthy choices to prevent breast cancer is that they tend to have a wide-ranging effect, lowering the risk of other diseases as well. As you take responsibility for your health, you will almost certainly find that your overall quality of life improves as well. While prevention may be the ultimate prize when it comes to breast cancer, from a wider perspective the real ultimate prize is a life well lived, one that is lived not out of fear, but out of love.

Fred Boner, the bands instigator, will be playing acoustic guitar and singing vocals. Duane Johnson on bass and Jeremy Terry on harmonica and acoustic guitar complete their organic connection of expressive, rejuvenating souls that musically and nonverbally interact with each other on stage to create a performance that is different every time, depending on the mood. Climate News Carbon dioxide levels in the atmosphere have now passed 400 parts per million for the first time in several million years. Pre-industrial levels of the greenhouse gas were about 280 ppm. (NYTimes.com, 5/11/13). Climate activists have begun a campaign to get colleges and universities to stop investing in carbon-intensive industries. This is patterned after the divestment campaign prior to the fall of South Africas apartheid government. (350.org) GMO Wheat Now at Large Genetically modified wheat has never been approved for sale in the U.S. Unfortunately, as with LibertyLink rice before it, whatever safeguards that were in place to keep it from entering our food supply have failed. According to the USDAs Animal and Plant Health Inspection Service, the GMO wheat, which is a glyphosate-resistant product from Monsanto, was detected in a sample from a farm in Oregon, one of 16 states that had test plots between 1998 and 2005. At this point its unknown how far it may have spread. (Non-GMO Project, 5/29/13) GMO Action According to organizers, the May 25th March Against Monsanto took place in 436 cities (including Helena) in 52 countries and included two million people protesting Monsantos development, patenting and marketing of genetically modified crops. (NYTimes. com, 5/27/13) Monsanto earlier succeeded in having a rider, nicknamed the Monsanto Protection Act, attached to Congresss funding bill, preventing the courts from stopping the growing of GM crops once theyre in the ground, even if theyre found to be harmful. (NYTimes. com, 4/2/13) GE Salmon Pledge Our store is one of many who have signed a pledge not to sell genetically engineered salmon, which appears headed for FDA approval despite concerns expressed by the Consumers Union and a survey showing that 91 percent of consumers dont want it to be sold. Whole Foods and Trader Joes are among the large chains who have signed on, with more than 4,000 store locations represented. (Organic and Non-GMO Report) Sun May Be OK A study done in Edinburgh has shown that exposure to ultraviolet rays along with heat lowers blood pressure. Heat alone did not produce the effect, nor could it be explained by vitamin D levels, which didnt change during the experiment. Because deaths from cardiovascular disease are 60 to 100 times more common than deaths from skin cancers in that part of the world, experts are questioning whether moderate sun exposure should be discouraged. (Dermatology Times, 5/13/13) Its clear that intense exposure resulting in burning should be avoided. Dairy Fat May Not Be OK A study followed about 1,900 breast cancer survivors for close to 15 years and found that dairy fat intake was associated with higher death rates from breast cancer (49 percent higher) and from all causes combined (64 percent higher). These were differences between women reporting consumption of one or more servings per day of high-dairyfat foods, such as whole milk and butter, versus those reporting a half-serving or less per day. The theory was that dairy fat contains estrogens that would support cancer growth. While these numbers may seem shocking, note that an association is not the same as causality. It may be that women who choose low-fat dairy products, or none at all, take other health measures. (MedlinePlus, 3/14/13)

Living Color

You can jump at least one level of intelligence by thinking about thinking. The simplest form of thinking is blackand-white thinking: yes-no, true-false, bad-good, right-wrong, win-lose, on-off, binary-digit (abbreviated to bit), twovalued logic. In black-white politics youre part of the solution or part of the problem, with me or against me. In health and nutrition this kind of thinking sees foods, ingredients and other chemicals as either bad or good. While it may be a good starting point to say that apples are good and sugar is bad, this kind of thinking naturally leads to extremes. For example, if vitamin C is good, then more must be better. In fact, as a general rule each nutrient has a range of levels where it is too low (deficient), too high (toxic) or just right. As Paracelsus aptly said five centuries ago, the dose makes the poison. So we go from black and white to shades of gray, along a one-dimensional continuum. But life is more than one dimension, more than shades of gray. Most of us have

three color detectors and see the world in living color. It has multiple dimensions. Nutrients never work alone. In living things it may be rare that we can say A causes B, as in vitamin C deficiency causes scurvy. Instead of a chain of causes, we are more likely to encounter webs of causality along with cyclical feedback loops that seem, much like human relationships, to have lives of their own. Because of this irreducible complexity, real intelligence and wisdom draw not only on knowledge but intuition, which can be looked at not as a supernatural power but a highly parallel multi-modal weighing process that happens below our one-thing-at-a-time conscious experience. Maybe all of this sounds heady. I do hope it helps free people from some of the overly simplistic thinking that we often encounter in ourselves and others. In the end it comes down to keeping an open mind, avoiding extremes, trusting your feelings, and eating a diet of real foods that come in living colors.

Australian Wattleseed
For over 6,000 years Australian Aborigines in different clans around the country parched and milled wattle seeds from around 100 of the 900-plus species of acacia, then used the coarse flour in baked seed cakes. This all changed in 1984, when the accidental discovery by Vic Cherikoff created the modern-day product known as Wattleseed. A delicate flavor echoing hints of chocolate, hazelnut or coffee, depending on your palate, wattleseed is used for everything from meat rubs to ice cream today. Australian Wattleseed Ice Cream


Yield: about 1/2 gallon Ingredients 4 cups half-and-half 2 tablespoons ground wattleseed 1 teaspoon vanilla extract 1 teaspoon almond or hazelnut extract 1 cup sugar Pinch salt 5 egg yolks In a nonreactive saucepan, combine the half-and-half, powdered wattleseed, vanilla, almond or hazelnut extract, sugar and salt over medium heat. Bring the cream to the boiling point and scald it. Remove from heat. Beat the egg yolks in a bowl. Add the cream mixture, about 1/4 cup at a time, to the beaten eggs, whisking in between each addition, until all is used. Pour the mixture into a saucepan, and cook, stirring, over medium heat, for 2 to 3 minutes, or until the mixture becomes thick enough to coat the back of a spoon. Strain the mixture through a fine mesh sieve. Pour the filling into the ice cream machine and follow the manufacturers instructions for churning time.
