2013: 10 years of the "World-Spirits Award"

An anniversary is always a good reason to look back. We launched the World Spirits Award (WSA) in 2004 and since then have moved ever closer to our big vision: to be the worlds best spirits competition.

Our work is always pursued with great dedication and commitment and in 2012, we achieved a real highlight. Over the course of the years, we have constantly increased the number of samples and submitters and the range of countries taking part. Of course, we are continuing to work towards perfecting these results even more. One highlight was the extra gold medal award for the Chinese Moutai at the Diaoyutai State Guesthouse in Peking where China receives the worlds presidents and holds press conferences. The President of Kweichow Moutai was awarded the gold medal for the Moutai Small Batch Blend in the presence of the Chinese Foreign Minister with plenty of celebrities, press and TV broadcasters in attendance. The feedback was massive with reports on national TV and approx. 100 media channels.

10 YEARS OF THE WORLD-SPIRITS AWARD

Happy Birthday WSA _ 40

This was reason enough to launch a patent programme for prospective sensory assessors. Fresh-faced young people aged 22 to 30 with an interest in spirits can complete a Master of World Spirits course after finishing the basic course. Companies can sponsor gifted young sensory assessors and cover the costs of their training as part of a scholarship package. For more details, see page 18 of the WSA guide. The participation of all the distilleries which have taken part in the competition since 2004 would be a very special birthday gift for the WSA 2013 this is the hope of those who came up with the idea.

ore products, more categories, more distilleries, more countries, more medals, more Spirits of the Year, more awards - and more success: this was the

One award - "Distillery of the Year" - went to the Dutch distillery Herman Jansen for its genever products. The Tyrolean distilleries Gerhard Maas and Gnter Oberhofer, as well as the Swiss cherry distillery Arnold Dettling, came out at the top of their groups, winning three additional World Spirits Awards. The Austrian distilleries Zweiger (egg liqueur), Gnter Oberhofer (Granny Smith apple), Kssler (barley cigar distillate) and Maass-Brand (blackcurrant liqueur) received the title "Spirits of the Year 2012" for the outstanding quality of their products. Two titles went to Switzerland - Arnold Dettling AG (wild cherry) and S. Fassbind AG (Crme Brle Cream) - and one to the Australian Inner Circle Distillery (Inner Circle Rum Grey).

sum total of the WSA 2012. Wolfram Ortner successfully ran the ninth edition of the top-quality award ceremony and exhibition at the GAST in Klagenfurt from 11 to 14 March 2012, doing justice to the slogan of "Simply the best in Spirits". For the first time in the history of the WSA, eight awards were handed out - four for the title of "Distillery of the Year" and another four for the winning spirits in the individual groups. The superstars of 2012 were - for the second time in a row - the German distillery Hubertus Vallendar which won two awards and the title "Distillery of the Year". The Tyrolean distillery Christoph Kssler was named "Distillery of the Year" and also secured the winning position in the cigar distillates category, thereby winning its sixth and seventh consecutive award.

Distillery classifications
35 distilleries were classified into the various categories (from fruit brandies to whiskies, grappas and rums) with 21 of them being awarded the title of "World-Class Distillery", 7 being named as a "Master-Class Distillery" and 6 as a "First-Class Distillery" - one distillery received the title "Recommended". The classification is not only a means for distillers to assess their current position on an international scale, but it also entails competitive advantages in connection with dedicated marketing measures and the support offered by "World Spirits". 1. Fragrance Typicality and intensity This is where the aroma of a product and also the taste typical to its variety are being rated. What makes a fruit rate positively or negatively should be determined at the training of the tasters, for example a raspberry can have the taste of citrus fruit, hay, somewhat like marzipan, or simply typically fruity. It is by the taster's judgement that the product shall be classified, for example, as O.K. (o), or as very good (+). The excellent rating (++) should only be used to distinguish when

2. Fragrance - Purity, deficiencies Here the deficiencies in aroma which negatively affect the results due to a lack of care during production and/or distillation are addressed. As soon as a product shows even a slight defect, it is to be rated with a (- -). If the product passes, then it is to be rated with a (+). In the case of doubt, a product can also be rated to the benefit of the submitting party with a (-) if the recognition of the deficiency is not 100% clear.

more than 95 points have been reached. Each (+) of the spirits per category increases the points per category by one. The increase is realistic concerning fragrance, taste and harmony the rating in the "purity" criteria should only be increased if a very extraordinary product is in question and 99 or even 100 points should be awarded.

3. Taste - Typicality and intensity An intensive taste and the typical features of a variety, as well as the density and complexity of a product, are rated positively. "Weak" products or those that are not typical to their variety will be negatively rated. 4. Taste - Purity, deficiencies Deficiencies in taste are addressed at this point. 5. Harmony The general harmony of fragrance, taste, alcohol (as well as wood or sugar) and the density of the spirits are used as a last criterion for the rating and round off the results.

Exceptional, alternative, trendy and striking products at the WSA 2012

Organic spirits The range of products available to discerning consumers has been expanded to include a number of new "spirited" products. At the World Spirit Awards, gold went to the organic Bio-Underberg Bitter, the organic orange distillate and the organic lemon spirit from the Pirker distillery in Mariazell, and to the organic Pcher Mignon (peach) from Apritiverie Saint Jehan. "Organic" on the outside, high quality on the inside. The sun rises in Asia Increasing numbers of producers in Asia and the Far East are taking part in the World Spirit Awards - and are awarded with gold for their excellent products. The stars at this year's event are Kweichow Moutai from China, the Vietnamese Son Tinh Liquor Distillery (A subsidiary of Highway4 JSC), and United Spirits Limited, the largest Indian spirits distribution company (also the largest in the world!). 100% distillates stored in wooden barrels A large number of 100% distillates stored in wooden barrels were submitted to the competition. This was one reason for creating a separate group for these products. In opting to use wooden barrels, distilleries such as Zwack Kecskemti Plinka Manufaktra (apple and prune, 50% vol.) or Matheus Plinka demonstrated courage in terms of the high alcohol content (over 60% vol.) as well as the storage of berries such as elderberry and blackcurrant. The current leader in the rankings is the Franz Tinnauer fruit distillery with its 61% vol. Weinhefe Holz Groe Reserve (wine yeast). Strong spirits Until now, open scales of alcoholic strength have so far been led by the rums - the prime example being the Rum 80 from Stroh.

White island rums have also long been bottled at a strength of 55 to 60%. Inner Circle Rum offers a great range of 3 Potstill rums with graduations of 40, 57 and 75%. Gins are bottled at a strength of over 60%. The fruit schnapps distilleries also adhere to this trend. Ortner's ESSENZ D WOB series stands at 71% and the spirits produced by the Franz Tinnauer distillery are equally potenP: the Williams pear & plum and the yeast reserves have both passed the 60% vol. mark. In Hungary, too, fruit spirits tend to be on the strong side: apple, apricot, Williams pear and plum varieties from Etyeki Czimeres Plinka contain 50% vol. alcohol. Note that bittering agents are strengthened with a higher alcohol graduation. Endless rums The Rum category was particularly heavily represented at the WSA and the qualities were fantastic. The wide range of different products from various countries and islands could not fail to impress any rum enthusiast. Quality is not a question of size The WSA is the most expensive but also the highest quality competition in the world. The participants range from the smallest garage-based distillers (Krausss, Whrer, Leitner, etc.) to some of the largest spirit producers and marketing bodies such as Underberg, Bacardi and United Spirits Limited. Coffee and cigar distillates "World Spirits" sees itself as a trendsetter and motivates distilleries in the fruit brandies industry to produce the perfect spirits to accompany coffee and cigars. Christoph Kssler conjured up the best coffee distillate, and the Arnold Dettling distillery developed a cherry cuve coffee distillate. Tyrolean all-rounder Christoph Kssler obviously has a knack for particular specialities, leading the cigar distillate rankings with his oaked barley cigar distillate.

WSA 2012 Trends

Trendy weddings - blends of cereal and fruits Innovation is in high demand in order to survive the hard times which have currently hit this niche market. Cuves, blends and mixes are the magic words. Mixes of cereal distillates and whisky and fruit distillates. Ortner has created a blend of Nock-Land whisky with an apple or grape barrique while Christoph Kssler has also adopted this product idea in the form of a cereal and plum cuvee. Non-mixed grape varieties - with no added sugar Grappa is currently enjoying a renaissance and reaching new highs in terms of its image and quality. Non-mixed grapes varieties are increasingly being used in the process and distilleries are moving away from the addition of sugar to the finished product. The resulP: more and more top quality grappas which cannot fail to please. Absinthe The revival of a legend: a new love of the "green fairy" is being experienced by producers and consumers all over the world. There is now a real hype surrounding absinthe - whether classic or liqueur, with 40 or 70% alcohol content and with or without sugar. The spirit in a (small) bottle While a 2 litre bottle used to be the norm, over the last 2 decades the 0.5 and 0.7 litre bottles have become the standard for high quality spirits and whiskies. Top quality distillates cost a lot of money - and not just in terms of production costs. 0.2 litre bottles are increasingly appearing on shop shelves. The reason: the purchase price is lower and the consumption process faster, avoiding loss of quality when a bottle has been opened. Low Alcohol Shots - for an occasional spirits kick More and more shots are becoming available in 20 ml bottles, like the classic Underberg variety. And - why change a good thing? XUXU and Pit Pitrinha shots are now also available in this smaller bottle size. Another attraction is the XUXU ten, which is sure to capture a target market in its 250 ml aluminium bottle which comes with its own drinking straw The natural aroma for cuisine: Parfum de Vie 71 Chefs use high quality distillates to flavour their dishes or as flavour enhancers. The distillate is set to 71% vol. and offered together with a vaporiser and the same distillate with "standard" strength. Parfum de Vie opens up a whole new way of using fine spirits: in the kitchen or at the table, by the service personnel or the guest himself. Chefs use high quality distillates to flavour their dishes or as flavour enhancers. The distillate is set to 71 % vol. and offered together with a vaporiser and the same distillate with "standard" strength. Parfum de Vie opens up a whole new way of using fine

spirits: in the kitchen or at the table, by the service personnel or the guest himself. The use of spirits in cooking is nothing new - but the distillates normally chosen for these purposes are not always of high quality. This innovation is totally differenP: Special dishes are developed and then put on the scene with two leading actors - a highly spirited fruit essence and high-quality products. The products stand out with their harmonious sweetness. Cheap ham tastes salty, high-quality ham is rather sweet; the same is true for vegetable and fruit, such as tomatoes or grapes. The taste of fine fish or uncooked scampi is also sweet. One perfect combination could be the following: scampi are marinated in olive oil and decorated with grapes, a "Parfum de Vie" of grape spirit adds the aroma, and the whole dish is served with grape spirit in "standard" strength. Another varian: uncooked halibut filet with a slice of pear and "Parfum de Vie" pear or Williams. The flavours - in this case in "spirited" form - are used to create harmony or to set a counterpoint. 100% distillates, high-quality spirits or even liquors can be used for flavouring. "Parfum de Vie" of clear distillates comes with 71 volume percent. There are two reasons for the high alcohol content: alcohol is a good aroma carrier, and the quantity of the distillate should be small to avoid diluting the texture of a sauce, for example. Barrique "Parfums de Vie" are bottled at 57 % vol.; liquors come in the original strength of the manufacturer, since they are mainly used for dressings, etc. Practical use The many possibilities offered by "Parfum de Vie" have to be tried and tested. Taste is something very personal, so that any recommendation or experience will always only be the "imaginative treasure of a culinary inventor". Creativity, fantasy and eagerness to experiment are called for - both in the kitchen and at the table! Parfum de Vie used in cooking Parfum de Vie as the cherry on the cake in service Parfum de Vie in the vaporiser at the table - for individual refinement

In the heart of the tropical island paradise, there is Appleton Estate - a place far off the beaten track, where the quality of life determines the pace of live. The coveted plantation rum is part of this quality and has been produced here since 1749. The oldest business in Jamaica, which has been operating without interruption to this day, is now owned by the British company J. Wray & Nephew Ltd. The sugar cane for the rum production comes from 4,400 hectares in the fertile Valley of Nassau, through which the Black River meanders. The climate is ideal for the plants, as are the rich volcanic soils. 216,000 tons are harvested per year. Special yeast cultures, developed on the estate, are used in the fermentation process; distillation takes place in old, onion-shaped copper pot stills.

In 1867, Franz-Xaver Dettling established a distillery in Brunnen on the shores of Lake Lucerne, devoted to the uniquely aromatic mountain cherries from Schwyz. 25-year-old Arnold Dettling took over the business in 1909, which from then on carried his name. In 1991, they established ties with global players Underberg, also a family-owned company. In 2000, the distillery was brought up-to-date technically. "Kirschwelt", the distillery's visitor centre in Brunnen, right in the heart of Switzerland, is carefully and imaginatively designed. Seeing, touching, smelling, and tasting cherries turns into a deeply sensual experience. The tour showcases the interplay of fruit, technology, technique, and design. Dettling is one of the leading kirsch producers in the world.

Asbach: The spirit of wine with numerous qualities

Volkswagen, C&A, Aspirin, Nivea and Haribo - German consumers trust these brands. And in the spirits industry, Asbach has been one of the "Most Trusted Brands" for the last 10 years according to a consumer survey. This specialist spirit from Rdesheim am Rhein has been successful for the last 120 years thanks to its strict brand and quality philosophy. The proof is reflected by its 86% recognisability rate. Success is guaranteed by an elaborate distillation method and lengthy storage of the distillates in limousine oak. 20,000 casks containing more than 120 valuable brandies up to 60 years old form the basis for the Asbach speciality compositions comprising up to 25 single distillates of different ages and origins.

Don Facundo Bacardi was born near Barcelona and immigrated to Santiago de Cuba in 1830, where he founded a small distillery in 1862 at Calle Matadero 57. His wife Amalia discovered a colony of bats under their roof; bats are thought to provide protection for cultural assets by the local Tano people, the indigenous population of Cuba. In Spain, bats are a symbol of health, happiness and family unity. And so this became the trademark of the new rum - now one of the most renowned logos in the world. Bacardi is the world's biggest private company dealing in spirits, offering over 200 rum, vodka, whisky, gin, vermouth and tequila products which are sold across the world in most cases. The main brands include BACARDI Rum, ERISTOFF Vodka, MARTINI Vermouth ...

2012 brings plenty of reasons to celebrate at the Hubertus Vallendar distillery in the village of Kail, which is located in the Eifel region near Cochem, on the Moselle river. The start of September marks the company's 25th anniversary and on that occasion, the company will be holding an open day. This has proved to be an incentive for additional new heights: from May, distilling will also be taking place in South Africa with the aid of two friends (Urs Gmr from Switzerland and Rolf Zeitvogel from the Blaauwklippen vineyard). The company already looks set to be a definite participant in the WSA 2013 in Klagenfurt. To describe Hubertus Vallendar as "just" a quality distiller seems rather insufficient.

Sparkling steel tanks, striking bottle design and a broad product selection - they all form part of this sophisticated distillery which is the empire of master distiller Robert Oberhofer, Head Chef at the Reschenhof country hotel in Mils. For years, the company, which started out in 1965, has been one of the elite distillers in Tyrol thanks to its reliable quality. The broad product range encompasses 27 products. The focal point of the range is on fruit and berry brandies with speciality products including Limonera, morello cherry, sloe, blackberry and blueberry. Rarities include blood orange, fig and Granny Smith with local favourites being rowanberry and elderflower. Tours of the distillery can be combined with a cold or warm snack or rustic platter of cold cuts.

Tradition is important at Sasse's. This family business in Mnsterland, close to the Dutch border, was first documented as a distillery and brewery in 1707. In 1885, the first steam engine with a 25-meter-high chimney was constructed - a landmark of industrialisation in the region. It was here in 1972 that the most modern distillation plant of northern Germany was built. In 1987, the traditional barrique maturation process was re-introduced to make the Kornbrand (grain distillate). Following a 10-year development phase, the "Mnsterlnder Lagerkorn V.S.O.P" matured grain distillate was launched in 1997 based on an old recipe. Today the owner and managing director of the company is Rdiger Sasse.

He is always among the top ten when it comes to distillate ratings - and he has continued the trend, securing himself the place of overall winner for the third time at the World-Spirits Award. He is perfect in the "play with temperatures" - from the fermentation of the mash in the stainless steel tanks to distillation using the most advanced technical methods. And all this takes place in quite unusual surroundings: Christoph Kssler works and lives with his family in the house where famous Baroque architect Jakob Prandtauer was born. The old building has been carefully preserved and the interiors adjusted to the requirements of a modern company. The initials "JP" on the bottles are a successful link to the tradition of the house.

"You can drink high-percentage alcoholic drinks, whether they are clear or matured in a cask. Our aim is to produce dense and full-bodied brandies with a good potential for storage. The fruit must be physiologically mature to produce these brandies. The technology is similar to that used in wine making: a cooled mash, selecting the right time for the distillation process and the technical ability to distil the mixture cleanly and with little loss of flavour." Franz Tinnauer knows exactly what he is talking about. He is not just a distiller; he is also a wine-grower with eight hectares of perfect vineyards and 4.5 hectares of orchards in the Gamlitzberg area of South Styria. Franz Tinnauer started out in 1990 with a borrowed distillery and the aim of becoming one of the best distillers.

Grenada is an island state of the Lesser Antilles between the Caribbean and the Atlantic Ocean - a speck in the sea, just 34 kilometres long and 19 kilometres wide. Most of the inhabitants of the former British crown colony are descendants of African slaves. Apart from tourism, agriculture is the most important branch of the economy; the main products are cocoa, nutmeg, and other spices. The island's rum production also contributes substantially to their exports. In 1937, the Grenada Sugar Factory was founded. The main product, Clarke's Court Rum, was named after a bay near the factory. The biggest and best-known rum distillery on the West Indian island is located to the south of the island at Woodlands Valley, surrounded by abundant fields of sugar cane.

For more than 300 years, ripe fruits, berries and roots have been distilled in the Alps into clear distillates "to capture the breath of the Tyrolean mountains and the essence of natural orchards to produce the finest schnapps". The roots of this tradition lie in small distilleries, such as the one owned by the Josef Hauser family in the Tyrolean valley of Leukental. Based on this tradition, a comprehensive range of spirits is produced under the "Hauser Tradition" brand name in Lustenau, Vorarlberg, which stand out with their mild and agreeable nature. Spicy and aromatic, like the fragrance of a meadow, and as light as mountain air - this is what characterises Hauser schnapps.

Genever, a precursor of gin, has been produced for centuries in the Dutch city of Schiedam near Rotterdam. This is where Peter Jansen founded his distillery in 1777. Following an eventful history and several fusions, the business has grown into a global network. The products include more than 12 brands in 30 countries, from local specialities like Dutch Genever and Friesian bitter to international whiskey, cognac, rum, and vodka brands. The company has been very successful with the Joseph Guy brand as the Dutch market leader for cognac. Selected batches from contract producers on-site are used to make the special Jansen cognac blends. Production takes place on two different sites: The Tweelingh Distillery in Schiedam makes the traditional Notaris Jenever.

Dewar's is one of the world's most famous whiskeys; it is the top-selling Scotch in the USA. It is named after company founder John Dewar, who started trading wines and spirits in Perth in 1846. His two sons ensured the international increase in business; in 1898, they built the Aberfeldy Distillery. Today, the distillery is home to the official visitor centre of the company, now a part of Bacardi. This is a world-class tourist attraction: every year, approximately 40,000 visitors take guided tours of the distillery to learn about the traditional production of Scotch whisky. The six stations of the tour are dedicated to the phases of the production process: malting, grinding, mashing, fermentation, distillation and maturation.

The pilgrimage village of Mariazell is famous for a speciality as sweet as honey - its Austrian gingerbread (also called "lebkuchen"). The traditional Pirker company has been baking gingerbread following handed-down recipes for more than 300 years. The headquarters of the family business is Mariazellerhof, a family-style hotel with its own confectioner and gingerbread bakery. More than 50 different sorts of gingerbread are hand-made here according to traditional recipes and with a blend of spices that is a closely guarded secret. The wide range of distillates and liqueurs is very varied. The quality brandies encompass a fascinating range of fruits and more than 50 products. Not to forget the traditional honey brandies.

The largest estate in the Armagnac region has been under the ownership of the Lesgourgues family for three generations. The Chteau was founded in 1870 and was purchased by the grandfather of the current owners, brothers Arnaud and Denis, in 1974: "It was love at first sight - and he knew it was just the right terroir for the best Armagnacs". The family empire grew over the years to include various vineyards in Bordeaux and the Domaine Monte de Luz in Uruguay, a specialist in producing Tannat red wines. The Ugni Blanc (40%), Baco (30%), Colombard (15%) and Folle Blanche (15%) varieties are cultivated over an area of 107 hectares, forming a broad basis for the refinement of the various quality Armagnacs.

The so-called Prutz Water was already prized by Emperor Maximilian; modern analyses show high levels of valuable minerals. Visitors to the mountain village at the entrance to Kaunertal, in the border region of Austria, Switzerland and Italy, can enjoy the healthy refreshing drink from the mineral source. The drinks offered by Gerhard Maass, a.k.a. "Tower Farmer" are of a totally different kind: Maass makes fascinating fruity spirits. His farm is named after its striking tower, three stories high and three cellars deep. The tower stands on the site of an ancient Roman watchtower. The cultivation area for producing the distillery's raw materials is also something special. At 900 metres above sea level, it is Austria's highest intensive-farming orchard.

"We have been farmers for generations", says Albert Bchele from the Michelehof, which has been based in Hard am Bodensee since 1838. The name of the estate is based on the name Michael since his grandfather and great-grandfather were both called "Michel". Today, the estate looks rather different with the focus being on fruit processing instead of animal husbandry and dairy farming. Fruit processing has always been part of the daily work here and a hobby has developed into a passion over the last fifteen years - with plenty of input and commitment and a friendly sense of stubbornness. Each year brings the highest possible accolades for this "stuff which dreams are made of". The diverse product range focuses on apples and pears and the fruit of the region.

The Fassbind distillery has its headquarters in the canton of Schwyz. The community of Oberarth is nestled between the Zugersee and Lauerzersee lakes in a valley between the Rossberg and Rigi mountains. It was here that in 1846 Gottfried Fassbind I. founded the Urschwyzer distillery which is the oldest commercial distillery in the country. The family home contains a visitor centre with a bar-lounge and a specialities forum. The craft of distilling has been handed down over five generations in accordance with the family tradition and headstrong spirit of the original founder. Today it lives on in the company philosophy which stands for values such as quality, tradition and a closeness with nature.

"St. Lucia Distillers is small, innovative and quality-focused," explains company director Laurie Barnard. "The members of our committed team place a great deal of importance on good cooperation and we want to be among the best rum producers in the world." The company was founded in 1972 based on two long-established firms: Barnard Family Estate in Dennery and Geest in the Roseau Valley, which forms the current site. Back then, the company was a mass producer of basic rum. Over the years, it developed to become a specialist in premium rum with a comprehensive selection on offer today. Visitors to the St. Lucia Distillers are taken on a journey into the world of rum - ideally as part of a tour.

Since 1930, the Hochstrasser family's extensive experience in the art of distilling has been passed down from generation to generation. The business is based in a stately property in the market square in Mooskirchen. Today, 3rd generation Managing Director Gerald Hochstrasser has been responsible for the development of this company since 2003. In the same year, the successful online shop with its own shipping department was established. 15 employees now work in the various divisions of the company and produce 300,000 litres of schnapps each year. A "transparent factory" is currently under construction complete with a vacuum distillery. The schnapps boutique fills visitors with amazement. With its selection of some of the finest and most pleasurable of items.

The Schnapsothek in the glass and wood-furnished contemporary sales room invites guests to come in and sample the quality brandies, liqueurs, juices and wines. More than 30 hectares of orchards provide the raw material, primarily comprising a wide range of apple varieties: Golden Delicious, Jonagold, Jonagorette, Gala, Braeburn, Idared, Rubinette and Gloster. In particular, the "Blaue Wildbacher" grape variety from which the local speciality "Schilcher" - a ros wine - is produced covers the three hectares of vineyards. This goes very well with the hearty delicacies of the family-run wine tavern such as "Verhackert" (a bread spread made from chopped bacon), "Brettljause" (a small cold snack served on a wooden platter), "Lendbratl" (cured and smoked pork loin) ....

The grandfather of master distiller rpd Nagy was a conscientious and warm-hearted man who was so popular with his employees that they distilled a delicious schnapps just for him as a thank you. rpd senior has been distilling here since 1978, and the secrets of Plinka-making have already been shared with rpd junior. There are many good Plinkas in Hungary but this family is meticulous about the quality of its products in order to maintain a leading role. The new rpd and Vadasz brands were developed in early 2009 following numerous awards at local and international competitions. The family cultivates plums over 6 hectares of their own land. The harvest is reliable and the quality high - the ideal basis for these classic distillates.

Gioacchino Nannoni came up with the idea for the first "Grappa di Fattoria" in the 1970s. This "farm grappa" has been certified to indicate that it is distilled using its own fresh pomace from the respective grape producers. The Nannoni distillery is proud to have produced the first selectively distilled Grappa di Brunello, given that it is only a short distance away from Montalcino. Since then, the region's vineyards have been drawing on the services of this renowned distillery to obtain grappa from the very best pomace, making Nannoni famous across the world. The distillate is featured on the menus of famous bars from Japan to the USA and from Hawaii to Korea. Today, the company is proud to be associated with famous names such as Altesino, Avignonesi, ColleMassari.

At the end of 2009, a dream came true for Szabolcs, Marcella and Gergely Pap - they opened their own family distillery in Etyek in the wine-growing region of the same name, some 30 km from Budapest. The small team of six manages one of the country's most modern quality distilleries. The choice of the family coat-of-arms as the company logo symbolises the strong family ties. The production process is characterised by its regional roots and the distinctive flavour of the fruits, most of which they grow themselves. The product range comprises apple, elderberry, cherry, apricot, Williams pear, raspberry, sour cherry, peach, strawberry, blackberry, plum and grape. The products can be sampled following a tour of the plant in the new tasting cellar which holds up to 60 people.

The Vrtes mountains are located in the north-west of Hungary at the heart of the Transdanubian region. The southern slopes of the mountains are home to a Mediterranean-like climate. The Nobilis "Plinka farm" extends over 300 hectares close to rural villages and protected natural forests. The production of Plinka has been regulated by law since 2008. Beverages can only be labelled as Plinka if they are made from fruits picked in Hungary and if both the fermentation and distillation also take place in this country. Kristf Nobilis manages a team of "maximalists" who work at the ultra-modern plant, applying the highest levels of precision craftsmanship.

As a small boy, he helped collect the mashed fruit from the barrels and was later introduced to the secrets of distilling by his father, says the fruit-grower and master distiller Johann Guggenbichler. Fine quality brandies have been distilled at the family estate since 1829 and the business is now in its 5th generation. The brandy sommelier shares the particular features of these traditional local fruit varieties with visitors during seminars and tasting sessions. The business is located in the picturesque Chiemgau mountains and the gently rolling hills of the Alpine uplands, at the heart of the fruit orchards where fruits ripen for use in the authentic Guggenbichler products.

Wines produced by very small vineyards meeting the highest standards of quality are known as "Vins de Garage". The Krauss family from Schwanberg has shifted this elitist philosophy to brandies - in fact, their distillery is based in a garage. Since it was founded in 2007, the distillery has won numerous awards. Its first international presentation at Destillata 2010 was a success: "Category Winner" for a cherry brandy matured in wooden barrels, the "Newcomer of 2010" award and inclusion of the distillery in the "Highest Quality" category. The basis for this top quality is the best fruit which produces sparklingly clear sophisticated brandies with the typical character of the fruit. The range comprises 25 varieties including classics like plum, Williams pear, sour cherry ...

Bruno Perkonig's career as a distiller started out in 1995 and to date, every product submitted to a competition has received a reward. Bruno Perkonig is a fixed contender at industry events and operates Carinthia's number 1 small distillery. The limited yet refined annual production totals 160 litres and 15 distillates which are primarily sold to private enthusiasts. Some of the rarest products, based on the philosophy of "less is more", include berry brandies made from local wild fruits. Fruit brandies and schnapps made from pip and stone fruits complete the selection. Bruno Perkonig's main job is as a teacher but his part-time teaching work leaves him plenty of time for schnapps distilling and researching the secrets of nature. An idyllic rural landscape, traditional cultivation and sustainable agriculture - all just 30 kilometres from Munich. A top-class seminar centre has been established at the beautifully restored Hohenkammer castle, set in a small community with over 1,200 years of history. The castle comprises the agricultural estate of Gut Eichethof with 300 hectares of land and 500 hectares of forest which also supply raw materials for energy production. The area has been consistently ecologically farmed since 1992 and has enjoyed considerable economic success. Company manager Helmut Steber sees the principle of sustainability as a means of devising a successful future rather than a return to the good old days.

Even hearing the list of the broad range of products makes you want to smell and taste all these delicious things: fine fruit distillates, spirits, whisky, "Zoiglbrand" (a patented speciality made from beer produced in the Upper Palatinate communities), herb and fruit liqueurs, Christmas items, products made from honey, espresso liqueur, the "Alte Propstei" selection, special varieties and grain-based products. Gregor and Martin Schraml represent the sixth generation in the old family business in Erbendorf. The landscape of the Steinwald nature reserve is craggy and densely wooded. Typical Upper Palatinate fruits such as juniper and elder grow on the meagre soil and the lonely corners of the Scottish Highlands spring to mind.

"That's unique!" Emperor Joseph II is said to have uttered these words of praise in 1790 upon tasting the aromatic beer brewed by Dr. Zwack, a doctor at the royal court. This was the start of a success story which continues to the present day. The company was founded in 1840 and Jzsef Zwack & Co. established itself as a renowned manufacturer of beverages, exporter and purveyor to the court around the turn of the century. The company remained under family ownership and was passed on to the next generation. In World War II, the factory was destroyed and after reconstruction in 1948 it was nationalised under the Communist regime. The Zwack family had no choice but to flee Hungary to Italy.

ASM has its headquarters in Sydney and was founded in 2004 with the notion of offering market-suited and "consumer-friendly" spirits. The ASM product range includes smooth vodka, an authentic tequila from Mexico, a fresh dry gin with a hint of orange peel and exotic spices, a white rum with elegant style, a Caribbean dark run with subtle notes of cocoa, vanilla and raisin, a Scotch whisky with a peaty single malt character and a Kentucky bourbon with a hint of vanilla, caramel and American oak. The philosophy of this up-and-coming Australian company is as clear as the brand identity of its small yet solid product range: the contemporary aesthetic design appeals to both customers and specialist retailers alike.

The Hirt brewery sees itself primarily as a Pils beer brewery but since 1998 has also produced exceptional beer brandies. Special beers are used to create the "Braumeisterbrand" brandy, and pure brewed beer is used for the mashing process and is distilled in a column distillery. This young brandy is fruity and hoppy and when the essential oils in the hops and yeast are reduced, a full-bodied malty tone emerges with delicate pear-like fruit flavours being predominant. The "Zigarrenbrand" cigar brandy is stored in barriques made from French oak following the distillation process where it is left to mature for over five years. It is this concept which characterises this small yet refined family brewery in Carinthia which represents over 735 years of brewing tradition.

Moutai is the best known alcoholic beverage in China and enjoys a status similar to that of vodka in Russia or tequila in Mexico. The roots of the drink date back over 2,000 years to the days of Emperor Han Wu. Today, the national drink is served at all state banquets and is given as an official gift. The protected origin of the product is the village of Maotai in the south-west of the province of Guizhou on the banks of the Chishui, the Red River. Maotai was only linked into the road network 30 years ago, meaning that it finally lost its importance as a harbour. However, the schnapps production reached new heights. Today, 25,000 tons of this 53% alcoholic beverage are made each year, with significant increases in production recorded.

ISchnapps distilling has always been a great local tradition in the Brixental, a valley located within the Kitzbheler Alps. The process of distilling is highly regarded here and is culturally influenced by the Archdioceses of Salzburg and Bavaria. The Erber family was issued distilling rights as long ago as the 16th century, provided that people and cattle were supplied with water from the spring as a priority. This pure spring water still adds the spirit of the mountains to the brandies today. The largest distillery in the Tyrol and Austria acquired a new managing director in September 2010: Master Distiller Christian Schmid who swears by the traditional double distilling process using a copper vessel.

XUXU changed its look in 2011, also improving the formulation and offering the additional convenience version XUXU ten. While the glass bottle offers a 15% vol. formulation, XUXU ten has a light 10% vol. in a 250ml ready-to-drink aluminium bottle with a straw. However, both versions have one thing in common: XUXU is even fuller and more pleasant in its taste, with an even more intense strawberry taste.

This small, family-run company in the German Ore Mountains specialises in herb liqueurs, herb spirits, fruit liqueurs and spirits. The history of the company dates back to 1882 when Emil Mckel purchased the head office building and opened a "manufactory of liqueurs and brandies" as well as a wine dealership. On 20 October 1933, Otto Ficker (grandfather of the current director) acquired the shop and plot. Despite many difficulties, the company continued to operate as a small-scale workshop until the arrival of Germany's political turnaround when Fritz Ficker started out afresh. He says with pride: "We are one of the few companies in the industry to macerate, percolate and distil the herbs and roots ourselves in-house and therefore we are a true herb distillery.

Gurktaler Alpenkruter is the biggest Austrian spirits brand and the most popular herb liqueur in Austria - an undisputed market leader in the herb spirits sector with a 42% market share. It is characterised by its mild and pleasant flavour and its easy digestibility. The alcohol content is also relatively low at 27% by volume. Gurktaler is available in various sizes. Gurktaler is distinguished from other half bitters by the addition of fresh herbs; most are made from dry herbs. The selected Alpine herbs from the Gurktal valley are preserved in a precisely defined ratio of alcohol, based on a secret recipe. The ingredients and flavours are extracted from the herbs during the maceration process which takes place at a location in the arcade passageways of Gurk cathedral.

After a 3 year development period, the goal was finally achieved in 2009: the Hilaritas spice liqueur, created by food technician Hans Reimers and his wife, Meike. This exclusive product is made from natural ingredients. When it comes to the selected spices used (vanilla, aniseed and cinnamon), it is about fine-tuning and not quantity, not forgetting the lengthy maturation period for the macerate. The 'composer' says of his work: "It is not the quantity of sounds but rather the beauty of the melody which creates the music. We wanted to compose a balanced harmony of flavours". A great deal of time was also invested into the bottle and label in order to visually express the company philosophy through stylish forms.

The headquarters of this family business are based in a stately county residence in Lower Saxony. HardenbergWilthen AG, the second biggest spirits manufacturer on the German market, has developed from three traditional companies: Karl-Dietrich von Hardenberg established a grain distillery in around 1700. For many years, the business was operated solely in the local region but from 1971, it underwent expansion. The acquisition of the "Der Lachs" liqueur factory, founded in 1598, added the "Original Danziger Goldwasser" to the product range. In 1992, the Wilthener Weinbrennerei distillery was acquired along with its "Goldkrone" spirit. The "Santa Barbara Spirituosengesellschaft" spirits company was founded in 2006 in collaboration with Semper Idem Underberg.

In 1993, ethnology student Markus Madeja travelled to Vietnam as a tourist - and he stayed. He went on to become a successful entrepreneur - with no start-up capital or bank loan, simply a convincing business idea. Today he has seven restaurants and a large distillery with more than 200 employees and a sales volume of 2 million dollars. Tradition is very important to him as are the Swiss virtues of quality and continuity. His distilling started out on a small scale with 2 litre containers. His home was his production site. Following the opening of his first and second bars, the products began to gain in popularity and he decided to shift to a bigger scale. Today, the company has a modern distillery on the edge of Hanoi with a European level of technology.

Andreas Franzl's small distillery is located some 60 kilometres east of Munich in the district of Erding. He produces a restricted range of products totalling just 1,200 bottles each year, although they are pure fruit. The sandy loamy soils of the hilly landscapes to the south of the Danube are ideal for growing fruit. Orchards comprising semi-wild trees produce a wide range of highly flavoursome fruit varieties. The untreated fruits stay on the tree until they are fully ripened before being used to create these characterful brandies. "We produce diversity with a lot of character, typical of the region and the seasons. I love speciality brandies made from rare wild fruit or from unproductive fruit such as from the Myrobalan, a wild plum.

Originally produced for the Colonial Sugar Refinery's "inner circle of management and favoured clients" in the mid-19th century, this popular rum was available until 1986. When the company was sold, the brand Inner Circle - an Australian icon - was discontinued. Stuart Gilbert, a great fan of this particular rum, found himself missing it keenly. He then decided to put his money where his mouth wanted to be and contacted Malcolm Campbell, the last master blender of Inner Circle, who still owned the original recipe and yeast. After buying the brand rights, Gilbert bought Beenleigh Distillery, the oldest registered distillery in Australia, in 2004 and as such acquired an industrial monument. In 2007, Inner Circle was taken over by Lion Nathan Australia.

New products are constantly being developed based on the motto of "be different". The focus remains on old Slovakian traditions and despite the diverse product range, the company seeks to retain the exclusivity of these alcoholic beverages made from natural ingredients. TATRATEA is a particularly special addition to the product range. It may sound exotic, but has a clear explanation: since the Middle Ages, hot tea with herbs and home-made spirits has been served in the typical "robbers' caves" in Vysok Tatry. The new product range aims to spread this tradition across the world.

Josef Lehar, a relative of Franz Lehar (the "king of operetta"), established an enterprise in 1902 that also had to do with composition - in his case harmonious distilled spirits, vinegar, oil, and tea - and which was able to continue rising, even through times of crisis. At the first international exhibition for "Trade, Commerce and Social Hygiene" in 1908, an herb liqueur - the "Original Lehar Bitter" - was awarded a certificate of honour. The company was taken over in 1976 by Mr. and Mrs. Wiesbck and transformed into the company it is today. Since March 2007, Dietmar Messner, a qualified graduate in business administration and a market researcher, has been running the business according to tradition as the new owner.

Adolf Wunderlich founded a liqueur factory in 1897 aged just 19 years old and composed the specialist herb concoction, Rossbacher. Specially selected herbs, roots and berries are carefully processed using the handed-down recipe - the exact composition is a well-guarded secret. The unique flavour reflects a traditional product which meets the latest trends in beverages: with its intensive herb flavours and subtle sweetness, Rossbacher can be served either straight or with ice or lemon. An extensive process involving three separate procedures is employed to extract the precious content from the raw materials: essences and effective substances are extracted using maceration while the herbs, roots and berries are soaked in an alcohol and water mixture.

In 1937, Ren Gilbert decided to make use of one of the most important products from Normandy: apples. He initially founded a production site for cider and a distillery in Fontenay and subsequently purchased Coquerel, which had established itself as a leading producer of calvados over the years. In 1971, the company merged with Asbach Germany, triggering an important period of growth. In 1992, the Domaine du Coquerel was acquired by Guinness. In September 1996, the company was purchased by Jean-Franois Martin and today is a small independent French company with 21 employees. Investments are constantly being made to replace the barrel stock - at present, some 2,000 small wooden barrels are in use to ensure the optimal maturation of the calvados.

Chteauneuf-sur-Charente is home to a real treasure: a collection of rare cognacs from the 19th century. The company was founded in 1905 by Abel Tesseron with one site in Grande Champagne (Boneuil) and another in Petite Champagne (Saint-Surin). Today, the company tradition is continued by Alfred Tesseron, the third generation manager who has deep roots in cognac-making. He grew up in France and worked in America before making Chteau Pontet-Canetone of the most successful Grands Crus in the Mdoc region. Henri Colcombet, the director of the company, has been developing luxury brands within a competitive field for the last 15 years. Still after 165 years, Underberg is the most important product of the Semper idem Underberg Group - but no longer the only one, however. Under the leadership of Emil Underberg, the enterprise has developed into an international, brand orientated spirit company. With the acquisition of Asbach, the great speciality from Rdesheim, Underberg obtained a second area of activity in Germany. Since the 1970s, the brand Schlumberger (premium market leader in Austria) has belonged to the Underberg Group. Alongside these, brands such as Unicum, Zwack, XUXU, Grasovka and Riemerschmid have been part of our successful portfolio. The Underberg Group has an annual turnover of approximately 500 million Euros worldwide with at least 900 employees.

Visitors to the distillery owned by Michael und Alla Ward can explore this colourful and perhaps somewhat crazy world! The couple moved from Tasmania to Queensland in 1992 where they purchased 1.3 hectares of land in the backcountry of the Gold Coast, fascinated by the diversity of fruit growing here. Since they didn't use any chemical sprays, the harvested fruits did not correspond to market requirements. So what to do with the large volume of fruit produced? Soon the solution was found: ferment and distil it! Australia's smallest pot still distillery has since achieved fame across the world: in Europe as well as the USA and Asia. The manufacturer offers a very diverse programme of over 70 products.

Tarpa was first documented for its fruits in a chronicle dating from as long ago as 1755. The village in the province of Szatmr on the banks of the river Tisza has a long-standing tradition in fruit processing and its fruit pures, in particular, are legendary. Over time, the fruit-processing began to disappear and the old recipes were quickly forgotten. The manufacturing company Tarpa Manufaktra was established in 1996 against this background with the aim of re-instating the local culinary tradition, using regional raw materials. Today, the top quality product range includes 40 organically certified products which are sold in many EU countries: fruit pures made from plum, sour cherry, apricot and quince, acacia honey and nuts, vegetable products and fruit brandies.

"Technikum Extrakt Getrnke" is the company's full name. Behind the name lies Lava Bru, a small yet refined manufacturer in the volcanic region of Styria. The brewery is located in a rural innovation centre in Auersbach near Feldbach and is one of the first addresses for whisky and top quality brewing in Styria. The manufacture of whisky is closely linked with the art of beer brewing here. The mash is prepared and refined in collaboration with the Lagler distillery in Kukmirn. This partnership began in 2003 and laid the foundations for comprehensive quality work, from the raw materials to the bottling. Only an exclusive quantity of organic whiskies is produced here - 2,002 bottles per year.

But above all else, he is a bon vivant and connoisseur of the purest water - or in other words, gin! As an extremely sociable and worldly-wise individual, he is a great ambassador for his exceptional product. In 1999, he and two friends set themselves the challenge of producing a perfect gin - with love, passion and a goodly dose of craziness, without any regard for the practical, financial or spatial restrictions involved. Enjoyed by hundreds of thousands of customers each day, Underberg - the Rheinberg herbal bitter - is No. 1 worldwide in the single-serving bottle and has been for decades, in terms of turnover, the market leader in Germany in the category of herbal bitters. The secret of its success: Underberg is still today produced from selected aromatic herbs from 43 countries. The recipe is a well-kept family secret. The herbs are subject to a strict incoming inspection and processed further with high-quality alcohol and fresh well water in accordance with a specially developed secret procedure called "Semper idem" (always the same in effect and quality). The gentle extraction of the active and aromatic substances from the herbs is guaranteed by means of this special procedure.

World-Spirits Academy 2013

Master of World Spirits: Demanding Testing for Spirits and Specialists

he route to becoming a "World-Spirits taster" is long and during training there are many challenges to be overcome. But only a perfectly trained jury, together with smoothly functioning procedures, can judge spirits as impartially as possible. In the case of "World-Spirits", it is not the name or reputation, but only the sensory abilities of the jurors and the responsibility to producers which are ensuring that a respected and comprehensible judgement of their products is handed down. The WOB rating system, developed especially for spirits, guarantees that this is taking place. Furthermore, "World-Spirits" is the only private organization which undertakes the classification of distilleries. Therefore, the results must be absolutely understandable for the submitting distilleries. Wolfram Ortner, with his personal commitment and sound WOB rating system, stands for care and reliability in the system's implementation.

Taster training sessions - basis for transparent rating

Within the framework of the "World-Spirits Academy" there are several all-day taster training sessions which are covering the individual categories, carried out over the course of a year. During the first part, the focus is on the products (with background information about origin, production, etc.), which are tasted, rated and defined in order to compile a joint "World-Spirits Ranking". In addition to dealing with the major categories (cognac, grappa/marc, rum, whisk(e)y, etc.), the tasters are also concerned with the definition of products derived from different varieties of fruit, such as apples, pears or cherries. In this training segment more than 20 products are discussed and rated.

World-Spirits Basic-Class in English teaching language: Sensory handling of spirits for beginners, recognising, evaluating and describing the wide variety of spirits, recognising flaws, identifying aromas and flaws, evaluating using the WOB system, completing a basic check test.

Checking the tasters - a precondition for participating in the jury

The second part of taster training is a blind check with 40 samples. At question is the recognition of spirits and flaws in them, the scaled rating of strength and typicality of fruit, as well as the recognition and rating of six products according to the day's topic (including identification of their origin). The candidates are only allowed to deviate three points above or below the average of the group's combined rankings. After evaluation of the results, the graduates of the training are entitled to participate on the jury if their score exceeds 70%.

and taste are playfully honed to perfection. Participants will discover fruit and their aromas, and they will also learn to detect flaws in spirits. The classification of standard samples helps to retain the exercises and their solutions. This message is directed at people who want to, or must deal with distilled spirits in a more serious way: Newcomers to spirits Specialists like distillers Trade factors or those engaged in the gastronomy Interested parties and buyers Consumers or guests in the optimal choice of a suitable beverage Journalists Future participants in the Master of World Spirits Award
The WS-Academy forms a coherent and thematically linked package, but the individual blocks and taster training sessions (day sessions) can also be booked separately. The aim of each daily training session is the successful completion of a written check test on the topic for the day.

World-Spirits rating system - a tool for objective judgement

With the "World-Spirits Award" nothing is left to chance: according to regulations, the three ratings carrying the most weight out of the ten made - six single, three group and one assistant - are used for the overall assessment, specifically the assigning of points to a product. The tasters are dealing with the products from an uninhibited and unbiassed perspective, and the rating is expressed with precisely defined symbols which are supported by numbers. Only after this is the total rating derived from the 100-point system. How can you become a World-Spirits taster, or essentially how can you be trained to become a spirits specialist? The annual program of taster training is comprised of twelve training sessions during four weekends. World-Spirits Award 2013 Simply the best in Spirits

olfram Ortner, a former professional skier, is continuing his success story as a promoter of the world of spirits. Just as the world championships are considered to be the ultimate for athletes, he is striving with the "World-Spirits" brand towards a great goal: improvement of the international distillates culture by theoretical work and practical implementation of the subject.

and is referred to by industry insiders as the 'World Championships' of the international awards.

The 'World-Spirits Award'

A survey has revealed that the 'World-Spirits Award' (WSA) is considered to be the best and highest award on offer by industry insiders and is highly regarded as such. The Jury & Academy No award comes with a more educated jury than the WSA as part of the 'World-Spirits Academy'. Only those who have been trained as testers by the WSA and undergone positive checks can secure themselves a place on the jury - participants from other competitions as well as recognised specialists all have to start their training with the WSA from the starting blocks.

The assessment system To ensure as objective an assessment as possible, symbols instead of points are used primarily. The WOB system, based on five assessment criteria and characteristics each, enables transparent and traceable results. Verbal descriptions are available in German and English. Distillery classification The WSA is the only competition which also encompasses distillery classifications. The title of 'Distillery of the Year' is also awarded. Communications 'World-Spirits' sees itself as a PR agency which works throughout the year for all the participants and in the broadest sense for the spirits industry as a whole. The results and business portraits can be found online at www.world-spirits.com in the online guide and in the Spirits Finder and printed in the 'World-Spirits Guide'. Ongoing editorial work for the international press and media partners demonstrates the quality and professionalism of the WSA communications work.

The World-Spirits Festival

The festival takes place during the GAST tourism fair in Klagenfurt (Carinthia/Austria) and serves both as a platform for presenting the products as well as promoting contact and the exchanging of experiences between exhibitors. Many of them value this informal contact with colleagues and consider the festival to represent ongoing and honest 'further development'. In addition to its possibilities for presentation and sales, the festival impresses with its ability to bring the industry together and outline a joint strategy for improving the spirits culture and increasing sales. The WSA participants are offered the following free presentation options at the festival - participation is not compulsory: Table presentation For very little effort, products can be offered to representatives from the hospitality trade, individuals from the Alpen-Adria region and international visitors. Spirits counter The products submitted are presented on their own table during the festival; this is what the third bottle to be submitted is used for.

The World-Spirits Glass

n the beginning was the hand-crafted and hand-blown glass in the WOB design, as shapely as it was functional, tailor-made for wine, water, whisky etc. Top-quality,

It suits every array of aromas from apricot schnapps to slivovitz, from calvados to whisky. It brings out the individual character regardless whether it is fruity charm or oak-aged heroism. It is the perfect companion for the young jetsetter as well as the mature grandee. Anyone who enjoys high spiritual pleasures will be rapidly won over by the all-rounder quality of this glass. Equally elegant and chic in the home as in the top restaurant, in the friendly Paris bistro as in the fashionable New York bar. The sprits world is wide, with home-produced products from Mexico to Moscow, from China to Chicago. All of them should be able to accentuate their style, their spectrum of aromas and flavours a challenge for one single glass, but one that the small but beautiful WS glass overcomes adeptly. elegant products, which inevitably (had to) come at a price. This provided Wolfram Ortner with the challenge of coming up with the styling of a new spirits glass. Alongside the satisfying spread of the spirits culture, the trendy products like distillates to accompany cigars or coffee, but above all growing number of lovers of spiritual pleasures grows the need for glasses which are all-purpose but most of all also affordable. Not everyone can or even wants to acquire the requisite glass for each product. Reasons of space, among others, argue against such a glass collection, as we know from the wine sector, which has culminated in the uncontrolled growth of the designer glass. This is where Wolfram Ortners new World-Spirits Glass fills a major gap in the market to be precise, a handy 18.5 centimetre-high gap. With its ideal form, its maximum surface and the sophisticated angle of rim it stands elegantly on the table, fits tidily in the dishwasher and, due to it being machine-produced, is very comfortable on the pocket only EURO 7.30 each! When it comes to talking about the advantages there are three particular features worthy of attention:

WSA 2013: Summit meeting of the worlds finest spirits & distillates

ever change a winning team! This is reason enough for Wolfram Ortner to organise the World-Spirits 2013 and the World-Spirits Award once more as a separate event during the GAST trade fair in Klagenfurt. From 17th to 20th March restaurateurs, merchants and connoisseurs of fine spirits will be expecting the best distilleries and distillates from the world of spirits at the biggest Hotel and Catering Fair in the Alpen-Adria Region.

Competition is the key to success

The international tasting session for the World Spirits Award 2013 will be held in the preliminary stages of the event with a panel of perfectly trained judges. Distilleries from all over the world are classified and compete for medals and the coveted awards Spirits of the Year and Distillery of the Year. The highlight for all participants in the award competition is the presentation of the fine spirits in the context of the festival.

Simply the best in Spirits!

Wolfram Ortner had numerous reasons to move his World Spirits Festival to the Carinthian state capital: First of all, Krntner Messen is a strong partner with an extensive infrastructure and a perfect marketing system. Secondly, the central position in Europe makes it easily accessible by road or plane on AUA, Lufthansa, Germanwings and Condor. These synergies will benefit not just the organisers but also the exhibitors and visiting trade professionals.

Meeting high standards

The World Spirits Festival will not only meet the high standards of visitors from the gourmet and beverage industries, but also those of interested members of the general public and the international press. The core of the exhibition is made up of distillates and Spirits of the Year, the award ceremony for the spirits and the classifying of the distilleries and, last but not least, the informative and enjoyable supporting programme. Over 17,000 visitors are expected at this four-day festival at the GAST!

The epitome of unparalleled pleasure: World-Spirits, coffee and wine under one roof
For the first time, GAST visitors have the opportunity to experience the products of three different segments of the beverage industry within one single exhibition, which is located in halls 7 and 9 and is furthermore rounded off by an attractive programme of supporting events.

Experiencing and understanding spirits a creative way to improve sales

A new additional feature will be again the so-called Spirit-Thek a gigantic perfume store where visitors can learn more about fine spirits and test their quality in a hands-on environment. Experiencing and understanding spirits a creative way to improve sales is the motto. A great number of spirits from all

Chefs use high quality distillates to flavour their dishes or as flavour enhancers. The distillate is set to 71 % vol. and offered together with a vaporiser and the same distillate with "standard" strength. Parfum de Vie opens up a whole new way of using fine spirits: in the kitchen or at the table, by the service personnel or the guest himself.

WSA Brandy Jerez Special

Andalusian lifestyle: Flamenco, Horses, Tapas, Sherry & Brandy

pain is the biggest brandy producer in the world brandy from Andalusia exceeds France and Germany together in quantity. The centres are the cities of Jerez

de la Frontera, El Puerto de Santa Maria and Sanlucar de Barrameda, a magical triangle between two rivers and the sea. This location with the special climatic conditions have a positive effect on the production. The Bodegas were originally mainly in the city centres and surrounded by thousands of hectares of vineyards. The alignment of the cellars towards the sea allows the ideal influence of moisture and wind. In the 1970's some gigantic Bodegas such as Osborne or Williams & Humbert emerged on the outskirts of the cities.

The history of brandy goes back to 1874 as the trade relations between Holland and Spain were very intense. Tradition has it that a shipment of brandy was ready for transport by ship but that complications emerged. The brandy had to remain in the casks for a longer period and these then became Soleras (span. solera': lying on the floor). This developed into the Solera-system which is still used today to let sherry ripen. This is also used in the brandy production, today however in a simplified form. The fact that enormous quantities of brandy are produced in Spain is based on a symbiosis of the sherry and brandy production. The classic 500-litre casks (partly also smaller or bigger ones) of the Solera-system are also used to age brandy after sherry types such as Fino, Manzanilla, Oloroso, Amontillado or Pedro Ximnez had aged for at least three years therein. A small residue remains in the casks at the beginning of the brandy production and imparts a special character to the brandy.

Brandy Jerez: History/Interesting Facts

The Arabian influence contributed to the fact that distillation started very early in Spain. The roots lie in Jerez: originally the grapes were cultivated here, today however nearly only storage and blending take place. In the meantime the growing and vinification have moved to the region of La Mancha. The distillates are produced by large distilleries to consistent quality standards and then transported to Jerez where they are refined according to individual recipes of the companies.

Production and Ageing

Brandy was used for hundreds of years to fortify wines. Not until the end of the 19th century did it become so-to-say independent as "Brandy de Jerez". The starting product is full-bodied and dry wines. The grapes are harvested gently at the beginning of September and squeezed in pneumatic presses. After fermentation the "Holandas" develop in a careful distillation

process - low-grade up to approx. 65% vol., at the most 70% vol. the actual basis for the brandy with a very lot of flavouring and aromas. Experienced cellar masters fine-tune these Holandas with additionally distilled higher-grade distillates - the so-called "Destilados" - and blend both in the required ratio, whereby each Bodega has its own recipe. The Brandies de Jerez are later diluted with water to 36% to 45% and continue to ripen in 500-litre casks of American oak. Simple brandies are drinkable after six months, good qualities remain some years in the cask. The difference to other brandies is the Solera system for which the particular climate of the region is of crucial significance. The finished brandy is taken from the bottom row of casks and filled into bottles. The same quantity is refilled from the above row. This procedure continues via several steps until fresh distillate can be refilled in the top row of casks. This decanting is repeated several times a year. This way the oxygen feed is guaranteed which gives the Brandy de Jerez its distinctive taste. If you walk through different sherry cellars with open senses and thereafter through the "brandy department" the individual aromas
Control and AOC AOC for sherry and brandy were the first protected designations of origin in Spain. A special Control Council, the Consejo de Regulador de la Denominacin Especfica del Brandy de Jerez, monitors all regulations and ensures thus the quality and indepence. All regulations are defined in the "Boletin Oficial del Estado"

will become a classic dj-vu experience: the aromas of the sherry casks can be found 1:1 in the brandy casks and the finished product respectively. Sherry and brandy have got identical genes: the influence of the sherry casks on the final product brandy is directly comprehensible concerning the sensory analysis. Finos are no longer aged oxidatively but have a more classic vinous character. The colour is also bright, hence also the brandy aged in fino casks. With brandies aged in Amontillado or Oloroso casks (these types of sherry are aged oxidatively), the colour of the product is already much darker, the sweetness or residual sugar respectively increases and an oxidative tone is noticeable. An "aroma bomb" in fragrance and taste are the brandies from Pedro Ximnez casks. The residual sugar is very high and a slightly oxidative tone in the aromas can be noticed. (This grape is processed like a kind of straw wine and has an enormous potential in aromas and sweetness).

WSA Genever Special

Genever: Des Gins hollndischer Vater

he history of Jenever - in Holland Jenever, in Belgium Genivre - reaches back for many centuries. In a deed from the year 1351 an "Eau de Vie" containing herbs is already documented. The birthplace of Jenever is the town of Schiedam where more than 400 distilleries were still located at the end of the 19th century. In the meantime only a handful of pure Jenever distilleries are left. The production of Jenever is very elaborate, since the so-called "Moutwijn", a malt brandy (a three-step-grain-distillate with malt) is distilled only in a fourth distillation together with the botanicals (juniper berries, as well as aniseed, ornage peels, dill, amber, coriander, caraway etc.). In contrast to this there is Gin which has outpaced Jenever, not only for cost reasons. The production of Gin in England was to prevent the costs of import duties. In time, the production method developed in another direction as the original Genever, using more botanicals and less of the moutwijn. Nowadays, Gin is distilled in ethanol together with the botanicals or ethanol is only flavoured with essences. Distilled gin must be produced with a distillate of botanicals.

distillate is very aromatic, fat and not very clean due to the low alcohol content. This "impurity" gives the Moutwijn body for the fourth distillation together with the botanicals, the gained distillate features an average alcohol content of 70% vol. (gestookte Moutwijn , or more specifically "Korenwijn" which may be distilled with a blend of botanicals or "Gebeide" when distilled with a high content of Juniperberry). Depending on the recipe or concept, the three distllates (Moutwijn, Korenwijn, Gebeide) are blended arbitrarily. The Moutwijn definition: "Eaux-de-vie-de-grains" are the basis for the Moutwijn, grain distillates with an alcohol content of 46 to 48% vol. These are gained through triple distillation in pot stills with only very low burning helmets. First the fermented mash is distilled - the result is the "ruwnat" (rough distillate) with approx. 13% vol. The second filling is called "enkelnat" (simple distillation) with approx. 26% vol. The result of the third distillation process is the "bestnat" (fine distillate) and the so-called "moutwijn" with an alcohol content between 46 and 48% vol. The "Schiedamse jenever en Schiedamse moutwijn": The definition of the Schiedam Moutwijn Jenever goes back to the year 1900, initiated by Herman Jansen with the Mayor at that time of the city of Schiedam. The reason was that on the one hand Jenever could be produced much cheaper with the technical achievement of the Coffey stills. On the other hand however, this happened at the expense of the quality and above all the typical

The Jenever production

To produce the Moutwijn, wheat (it can also be rye) as well as maize and spiced barley are macerated in more or less equal portions and brought to fermentation together with yeast. After the fermentation this corn mash is distilled in three steps and the alcohol content continuously "pushed upwards". The thus gained

character of this traditional product. Therefore the regulations for the production of the "Schiedamse Jenever en Schiedamse moutwiijn" were created to guarantee the independence and incomparability of the grain spirit.

Moutwijn is either produced as a pure distillate or used as an aromatic component in the Jenever. There is a triple distillation, and in the third distillation spices flavour the product. Jenever: must have more than 30% vol. alcohol and include a defined amount of malt brandy. The flavouring extends from traditional juniper to caraway, aniseed, coriander or dill. Jonge Jenever: the quantity of Moutwijn is maximum 14.9% vol. (minimum 5% vol.), the entire alcohol is more than 35% vol. The juniper flavour is not always noticeable. Oude Jenever: the amount of Moutwijn must be more than 15% vol. - the remaining alcohol can also be from Moutwijn of course but mostly it is pure ethanol. The designation "oude" has nothing to do with age but exclusively with the defined amount of Moutwijn. Graanjenever: this designation is used if only grain and malt have been processed. Concerning superior products the botanicals are also distilled and not added as aromas. Korenwijn or grain barndy respectively: is produced from grain and must have at least 51% Moutwijn with at least 38% vol. (or be Moutwijn distilled to 70% vol.).

Jenever designations and qualities respectively

One distinguishes "normal Jenever" (less than 35% vol.) as well as old ("oude") and young ("jonge") Jenever, whereby the age of the finished product is not crucial but the quantity of the used Moutwijn. If a Jenever has less than 35% vol. (minimum 30% vol.), the designations "young" or "old" are not allowed to be used. Basically, an amount of malt brandy need not be there - only a slight juniper note. The law stipulates that a Jenever (oude or jonge) must have a defined amount of malt brandy, pure alcohol may be used in addition (not defined which basis - molasses, grain etc.) and juniper berries added, however not noticeable in the taste. The definitions in Holland do not coincide with those in Belgium - presently they are working on a joint AOC which is supposed to be implemented by 2015. Moutwijn: traditionally distilled from barley, rye and maize whereby the Moutwijn from Schiedam must not exceed 48% vol.

B. The new benchmark in the world of spirits

10 years ago the starting signal was given for the first World Spirits Award, in short WSA: Wolfram Ortner, mastermind and organiser, started with the spirits award and fair Destillata after seven years of basic work and experience to create the best competition and independent quality assessment system in the spirits scene. With his unruly will for perfection, persistent consequence and consistent uncompromisingness in terms of quality, Ortner has established one of the leading competitions. The results of a participant survey confirmed that he has achieved a quantum leap forward so to

speak and succeeded in the quality assessment and development leaving comparable events miles behind. Independency, competency and transparency are basic values of the WSA and have led to the highest appreciation in the spirits trade.

Unique worldwide: real classifications can be found only with the WSA
When other events concentrate on awarding and award many a title on the basis of some successful samples, the WSA is in the position to provide classifications on a purely solid basis of individual products as well as distilleries with 100% comprehensible results. With our event we are ten years ahead of the market, Ortner sees himself confirmed. Insiders have been speaking for a long time of the WSA as the inofficial World Championship and of the measure of all things in the world of spirits.

Wolfram Ortner with Aurelie and Hubertus Vallendar - the WSA star of the last two years.

The worlds best jury and unique valuation system make the difference
The secret of the WSA lies in the unsurpassed quality of the jury, based on their meticulous training and the unique underlying system of assessment. Furthermore, the results are provided not only as assessment in points with five valuation criteria but additionally as comprehensible verbalised facts a most welcome help for assessment not only for the consumers but above all for the presentors themselves! And, the product is assessed only as a snapshot in its present condition dubious forecasts are not provided. Even if other events are cheaper at first sight producers could have to pay dearly for their participation, Ortner explained, Concerning valuations according to the random principle good products can also fall through and distilleries suffer serious image damage. It is high time for a change of thinking and this process of rethinking has already begun thanks to the WSA!
Wolfram Ortner is proud of the WSA jury. He feels they are the best in the industry - as do many of the WSA participants!

Quality rather than quantity

500 samples from 100 distilleries from all over the world was the aim when founding the WSA. More is not seriously feasible with the high requirements on the judgement of the jury and the general level of the event, as the concept of the system is quality! This means in practice: if up to 1,600 samples are handled by 30 to 35 tasters within 2 days at other events, 7 rigorously trained tasters taste only about 50 samples per day at the WSA. Since its foundation in 2004 the WSA has been in a state of slow but constant growth. The number of samples, products, categories, participating countries and distilleries has increased in small steps as well as the amount of awards, always benefitting the quality. At the same time the faith in the fair assessment considering tradition and origin has resulted in a global participation and corresponding expansion of categories e.g. with Chinas Baijiu and Moutai. In 2012 the WSA reached a level of 400 samples from 75 distilleries.

10 YEARS WORLD SPIRITS AWARD

The three sections of World Spirits:

The "World Spirits Award" - the global competition and classification The "World Spirits Festival" - the presentation of the WSA participants at the GAST in Klagenfurt, Austria The "World Spirits Academy" - the "mental" training centre where jury members and experts acquire their unique competency in assessing spirits from the Basic Class via the Master Class up to the "Master of World Spirits".

C. The system of the World Spirits Award

Why the WSA jury is probably the best in the world
WSA jury members must not only achieve an impeccable sensory performance, they are also responsible for giving a comprehensible product assessment towards the producers. Comprehensible results are not based on the random principle - they are the result of a meticulous training and tough checks which make the WSA jury the best in the world. The competency of this jury is unmatched worldwide and everybody without exception who wants to have a say in the WSA jury must undergo the sophisticated training programme - even professional tasters and experienced sensory assessors are trained towards the sophisticated quality standards and system of the WSA - just like pilots are trained for bigger and sophisticated aircraft. Most of the WSA tasters have been cooperating with Wolfram Ortner for years and are sought-after judges at many other international and national tastings as well. However, since examiners "retire" at the age of 60 - at this point of time their sensory capability begins to fade naturally, a dedicated mentoring programme was initiated. In order to allow the comprehensive and expensive training for young junior tasters, patrons from the world of business take over individual mentorings - a clear sign of appreciation and trust which in the meantime renowned producers show the WSA Academy.

The training and valuation system 1. Taster training - the basis for transparent valuation
Within the World Spirits Academy - after completing the basic training - several one-day taster trainings concerning the individual categories are conducted in the course of one year. The first part deals with the products: with the respective background information among other about the origin and production, they are tasted, assessed and defined, and a "World Spirits Ranking" is compiled. Beside the large categories such as Cognac, Grappa/ Marc, Rum, Whisk(e)y etc., the tasters devote themselves to the definition of products made from different types of fruit such as Apple, Pear or Cherry brandies. Due to the global charisma of the WSA more and more exotic specimens find their way into the WSA system - e.g. samples from countries such as China, Vietnam and India are also included. In this training block more than 20 products are discussed and assessed.

The members of the WSA jury have to complete at least three training sessions at the Academy each year with checks, of course!

45

WORLD-SPIRITS GUIDE 2013

10 YEARS WORLD SPIRITS AWARD

2. Checks: 70% hit ratio as a minimum for the jury

The second part of the training is a blind check with 40 samples. The task is to recognise spirits and their flaws, scale the intensity and typicality of a fruit or a flaw as well as recognise and value six products of the day's subject including a determination of origin. Whereby the stakes are high for the examinees: they are only allowed to deviate three points from the collectively developed ranking. Only those who have achieved a hit ratio of more than 70% - and all this during several checks and many years of positive results in practice - is entitled to participate in the WSA jury!

3. The WSA valuation pattern - instrument for objective assessment

The valuation takes place according to Wolfram Ortner's Spirits System - a 100-point system especially tailored for spirits with five valuation criteria: from (-) flawed/ very weak, 10 points to (++) exceptional, 20 points. The criteria value aroma and taste respectively according to typicality/ intensity and cleanliness/ flaws as well as general harmony. All valuation criteria are explained separately in written form and communicated in technically correct English or German to the presentor.

4. The tasting itself

Peace and time are important requirements for a correct assessment - one reason for the quantative restriction of samples to 500. Per day only 50 samples are tasted by 7 tasters and the sensory performance during the tasting monitored permanently. Each taster receives 4 covered glasses with a consistent temperature of 18C. Each taster prepares his individual judgement in abbreviations and subsequent point computation without comparing the samples. The individual judgement is then controlled again with the empty glass and corrected if necessary. When preparing the group's result, deviations are dealt with and flawed products tasted again. Each product is always valued parallel by three teams whereby one team consisting of two persons submits a joint group valuation. Thereby at least one of the team tasters is a specialist in the respective variety who can guarantee the expertise, while his team partner ensures the sensitive sensory assessment for the team's valuation. The seventh person in the team is an assistant who assesses him/herself - this valuation has the status of a team - analyses the valuation sheets, controls the work of the jury and decides together with the organiser in cases of doubt.
The WOB system software is used by the jury members to monitor the achievements. The WSA "Bible" is also stored here.

5. The basis: the "Bible" of the world of spirits

The basis of all jury assessments is codified in a manual, the actual "Bible" of the WSA - and thus of the entire world of spirits. All knowledge, all definitions and experiences are entered into this manual which is constantly growing. It is alive and growing not only with each jury training but also with every single one of the numerous educational tours of Wolfram Ortner. These "Spirit Tours" guarantee that local colour and different cultures are integrated into the valuation pattern. As the brand already says, the World Spirits Award is the only global spirit award which does not stand for a certain market but which feels obliged to the entire world - the WSA's objective is to assess all spirits with due respect around the whole globe.

WORLD-SPIRITS GUIDE 2013

44

10 YEARS WORLD SPIRITS AWARD

"Spiritual Tours" lasting weeks around Europe or to China, Latin America and South Africa are on Wolfram Ortner's programme every year. What at first sight looks attractive is in reality rock-hard work where Ortner visits at the most five distilleries per day, learns about production processes and tastes products. All these experiences are registered and passed on to the participants and jury members at the World Spirits Academy. On the basis of these products empirical values are discussed, defined and harmonised with the "measuring stick" of the WSA-understanding and the aspiration of treating each and every product - even an exotic one - respectfully. Whereby the ultimate aim is to become part of the manual for all WSA-tasters and WSA participants.
"Spiritual journeys" from Mexico to China are all part of the course for Wolfram Ortner when it comes to checking the quality of the products submitted.

But Ortner also lets the public take part in his spiritual border crossings: prepared for the press or in his own media such as www.worldspirits.com anybody who is interested can participate in his experiences.

D. Awards and classification

Award of the best spirits
The WSA honours on an annual basis: the best products of different varieties (Spirit of the Year with at least Double-Gold, whereby the award is geared to the number of presentations per variety), groups or variety groups respectively (World Spirits Award) and categories (World Spirits Award). The World Spirits Award goes in each case to the producer of the product of a group with the most points (e.g. fruit brandy "Pipfruit" or fruit brandy "Stone Fruit" etc.) and to the best distillery of a category. Whereby the award always depends on the number of products or distilleries respectively. The product of each category with the most points is awarded the title "Best in Category" - provided sufficient products were presented in the category.

The WSA distillery classification

Only the WSA determines real classifications according to a standard which has long been a tradition with wine estates e.g. in Bordeaux. Admittedly other events also award titles, this however is done on a basis which is orientated towards some successful samples and reflects little real quality. With the WSA ALL presented products are assessed whereby the distiller has to present at least five products in three groups in one category - and of course may present products in several categories. The WSA classifications extend from "World Class Distillery" (92-100 points) to "Recommended Distillery" (80-84 points). The three distilleries per category with the most points receive beside the assessment according to the valuation system in points in addition the title "World Spirits Distillery of the Year" in gold, silver and bronze. This is a coveted marketing tool which is well reflected as a bottle sticker, in press releases and promotion activities and which is also launched worldwide appropriately in the media by the WSA.

He could open a business for "World Spirits Award" - Christoph Kssler from Tyrol.

43

WORLD-SPIRITS GUIDE 2013

10 YEARS WORLD SPIRITS AWARD E. The "World Spirits Festival"

As a platform to present products the festival is a real feast for all senses which is appreciated by many participants for the relaxed gathering and for its value as permanent and honest further training as well. It takes place every year within the tourism fair GAST in Klagenfurt (Carinthia/ Austria) and offers several free presentation opportunities without any mandatory participation: Table presentation: products can be presented with little effort to representatives of the catering industry above all from the Alps-to-Adriatic Region. Spirit-Bar: the third bottle of the presented products is presented by the WSA on a single table within the festival. The benefits that each participant can expect at the World Spirits Festival: Presentation Exchange of experience Initiation of business or sale respectively Maintenance of contacts And last but not least: further training The concept of the common spirit that the festival breathes, forges the exhibitors to a congenial and open family - always in search of a common way forward to improve the culture of spirits and increase sales.
The "World Spirits" Festival is not a sales fair - it serves the entire spirits industry.

Quality leads to performance, performance has a price tag

The WSA is not cheap compared to other events. However, this event is without comparison. Nowhere else do we taste and assess with such high quality standards and with so much effort. Nobody else provides such comprehensible and serious valuations and classifications. This high effort has its high (appropriate) price - and this is settled with the presentation of the first variety with the WSA that costs 880,00 euro. Every additional variety per distillery or brand amounts then to only 180,00 euro. Beside the precise tasting and verbal assessment (in German and English) the participant receives an attractive marketing package which is automatically included in his participation. It includes intense and regular press relations not only within the WSA but continuously during the whole year. It also includes the preparation of a company portrait in English and German, the publication in the WSA Guide and WSA Spirits Finder, presentation and public relations within the World Spirits Festival, the right of use with the brand and much more.

10 YEARS WORLD SPIRITS AWARD F. The "Who is Who" of the WSA

The WSA Makers
No question - Wolfram Ortner is the "mastermind" behind the WSA. But without his wife Barbara the operation WSA would not be where it is today. Both live for spirits and everything that has to do with this subject. They operate a distillery in the Nock Region in Carinthia and are competent in all organisational and journalistic sectors. Ortner's background as a top athlete - he was one of the best slalom aces of his time shaped him: he knows the success factors such as performance, quality, transparency, fairness, self-control and perseverance. If skiing was his life in earlier times, then today it is the WSA. Wolfram Ortner not only lives the WSA, he IS the WSA - with all his flesh and blood.

The WOB duo: the "B" stands for Barbara, the "W" for Wolfram and the "O" for the alpha and omega of the "World Spirits Award".

The participating nations: something spiritual from all over the world
Producers from all over Europe such as France, Great Britain, Ireland, naturally the organising country Austria and its neighbouring countries from Germany to Italy. The feedback from participants

A statement which is representative of many positive reactions:
Toni Eberhard from the company Dettling of Switzerland - success lies in partnership!

"We have been taking part in the WSA since the beginning in 2004. The secret of our success is the product quality and the participation in the WSA for many years. This means that we can now reap our "economic fruits" in difficult times. Continuity in participating and our own marketing are the magic words"!
