Assembly
Grillworks grills are designed to be simple from the start. e included hex key should
be all you need to assemble yours. Only the number and size of the surfaces, re grates
and ash drawers vary from model to model, so assembly is nearly identical.

Grillworks grills support open res. Safe operation requires precautions
against smoke, heat, hot surfaces and escape of burning material.
DO NOT USE ON WOODEN DECKS, NOR ON OR NEAR OTHER
FLAMMABLE SURFACES OR SUBSTANCES.
Keep children away.
Before lighting a re, make sure all grill elements and equipment are properly
mounted and locked in place as outlined in the ASSEMBLY, OPETION
and MAINTENANCE sections.
Have water or a wood-re extinguisher available.
Do not use treated, painted, coated or synthetic materials for fuel (ply-wood,
particle board, paneling, plastics, etc.). ey may contain toxins.
Do not move, cover grill or pull out the ash tray when there may still be
burning material present in the tray(coals).
Position re well in back of the re-grate restraining ange to help prevent
burning material from escaping. AEND FIRE AT ALL TIMES.
Build small res, steadily adding small amounts of wood as you go.
FLAMES SHOULD NOT REACH MORE THAN HALFWAY UP THE
BACK REFLECTOR.
Do not cook in strong winds, which might carry sparks. Avoid excessive smoke
inhalation by cooking with the wind at your back as you face the grill.
Do not use indoors except in a replace or tested, code-compliant grilling area

WARNING: read before assembly and operation
Gently place the body of your grill on its back, onto a smooth surface to avoid
scratching the polished stainless steel. Locate the included hex key and bolt supply
in the box.
Use the bolts to ax each legtwo wheeled legs go on the back corners for our
residential models while the heavier Asadors have four, with leg crossbraces. Li
each end of the grill as you aach the legs, then stand the grill upright.
Slide the ash drawer into its track at the base of the grill body.
Place the re grate in the boom of the grill with the re retaining ange at the front
and facing up.

Slide the cast crankwheel onto the end of the crank axle that runs across the grill.
Tighten the bolt at the neck of the wheel so that it meets the notch in the axle.

(Asador only) Asador models use oating re brick heat shields. Remove the
top bolts at the back and li o the retaining cap. Drop the bricks into the boom
channel at the back of the grill, small brick at the center. Stack the bricks in columns,
then slide the t-shaped oating retainers into the boom channel and the seam
between the brick. Replace and bolt the top cap over the oating retainers and brick.

Place the V-channel surface onto the li frame so that the at vertical plate at one
end sits securely on the back of the frame, held in place by the angled stops. e
open V-channel ends should be facing you as you stand in front of the grill. Crank
the surface to the top.

Hang the basting pan on the two mounts at the front of the li frame and slide to the
side to lock it in place. e Persuader tool hangs in a hole in the top of the grill main
frame. Use this to persuade basting juices down the V-channels into the basting
pan or to clean the surface at the end of your grilling session.
Operation
Maintenance & Cleaning
Your Grillworks grill should need no major maintenance for many years. e body and
cooking systems stainless steel will not rust or corrode, but there are a few things you
should check every once in a while.
1. Cable collars. Twice yearly, make sure the hex screws holding the cables to the collars,
and the collars to the axle sha, are rmly seated by tightening them with your hex key.
2. Crank wheel. Twice yearly, make sure the set bolt anchoring the wheel to the
suspension sha holds it tightly in place for turning.
3. Lubrication. Once yearly put household oil on the suspension sha where it passes
through both sides of the frame or enclosure. Place another drop on the pivot point of
the ratchet- lock that holds it at height.
4. Cleaning. Lower the surface close to the re at the end of cooking and scrape away the
charred residue with the Persuader. For a deep cleaning, the V-Channels, basting pan,
and Persuader tool will all t in a standard dishwasher. e frame can be shined with
any cleaner designed for stainless steel.
5. Cover. e optional freestanding grill cover mounts with the Grillery logo facing you
as you face the grill. e opening on the right side ts between the grill frame and the
crank wheel so the wheel remains outside the cover.
Cooking Woods
It is a myth that only certain woods, such as mesquite, make good cooking fuel. Most
dry hardwoods, including some of the most common, are ne, and several superb.
And-importantly-they retain their own distinctive avor to a far greater degree than
pre-burned charcoal.
Good standbys are the most well knownoak, maple, mesquite and hickory. Great are
the nut and fruitwoods including walnut, apple, cherry and grapevine clippings. Conifers
hold a lot of pitch so are best used only to start your re. Be adventuresometrying
out the great variety of hardwoods available can be as much fun as experimenting with
seasonings or matching wines to your dishes.

Fire Building
Review the safety tips in Assembly before lighting the rst re in your grill.
Assemble your re as you would for a campre or replace. Crumple up 5-8 single
newspaper pages and make a layer of them on the black re grate. Create a second layer
of small pieces of wood, angling them loosely across the paper. Light the paper. Your next
layer should be larger wood, ideally 1-2 in diameter, added slowly as the smaller pieces
catch re. ere are natural starters like Fatwood that can start a stubborn re fast, just
make sure they have completely burned away before placing dinner over the ame.
Operation Basics
Before lighting a re check to ensure that the cooking frame suspension system and its
ratchet locking device are functioning freely, that collar ings and crank wheel are rmly
anchored to the suspension sha and that assembly of the re-grate, ash pan, V-Channels
(or rotisseries) and basting pan have been completed as in Assembly.
To raise the cooking frame that holds either the V-Channel cooking surface or the
rotisseries, turn the crank wheel clockwise. e frame will lock at any desired height. To
lower the frame, grasp the crank wheel handle with your right hand, while disengaging
the ratchet latch with your le hand; then slowly turn the crank wheel counter-clockwise.
Dual Asador models use two crankwheels-one to control each station. e right station
cranks up clockwise, the le counterclockwise.
Coals are not necessary for cooking on Grillworks grills, which are designed for ame
cooking. You may begin as soon as you light the re, making sure, however, that the li
frame and surface is at the maximum height to avoid burning the food. Arrange the re
evenly in the rebox, toward the center rather than only at the back.
Grill Surface
Before placing your food make sure the V-Channel surface is seated correctly with the
open end of the channels facing forward. Ax the basting pan and add the ingredients
of your choice, starting with a splash of base such as extra virgin olive oil, buer or wine.
Liberally and regularly baste your food using a high-quality natural bristle brush.
If one or more V-Channels becomes blocked while cooking is in progress, free them with
the Persuader tool. Its head ts the interior dimension of the channels.
Making best use of the V-Channels
Because you can regulate heat and convert juices into basting sauces, opportunities
present themselves in ways you may not associate with grilling. For example,
we recommend:
Whole poultry split and cooked at, like steaks
Whole sh bueried and cooked without turning
Vegetables and fruits-their sweetness is complemented by hardwood avor
You likely know the basics, so here are ways your Grillworks grill will extend your range.
1. Basting. We cannot stress this benet enough. e juices that ow down the
V-channels into the basting pan are the ideal foundation for sauces. Having them
available transforms outdoor cooking in important ways. Meats and sh remain moist,
with avor enhanced and nutrients retained. Ioods that would dry out or burn without
basting become excellent grill fare.
2. Low heat. Precise heat control lets you cook delicate things delicately. For example
salmon, bueried whole on a bed of fresh dill and basted with buer cooks gradually
in the moist heat, never having to be turned or disturbed until serving time.
