MISSISSIPPI MUD PIE Ingredients: (serves 8) 225g flour plus a little bit more for dusting 2 tbsp.

cocoa powder 150g soft butter plus a little bit more to grease the cake tin 2 tbsp. sugar 1-2-tbsp. cold water Filling: 157g butter 350g brown sugar 4 eggs, beaten 4 tbsp. cocoa powder (sieved) 150g bitter sweet chocolate (high percentage of cocoa solids) 300ml cream 1tbsp. Chocolate syrup Decoration 400ml cream beaten until stiff Chocolate flakes (or grated chocolate) Instructions: 1 Put flour, cocoa powder and butter into a bowl. Mix well. Add sugar and as much water as needed to get smooth dough. Wrap the dough in cling foul and let it cool sit in the fridge for 15 minutes 2 Preheat the oven to 190C. Now roll out the dough on a flour dusted surface. Take a 24 cm in diameter tin grease and line with baking paper- put the rolled out dough in the cake tin. Lay a piece of baking paper on top of the dough and let it bake for about 10 minutes. 3 For the filling whisk butter and sugar together. Add eggs. Melt the chocolate in a pot on very low heat and mix in the cream together with chocolate syrup. Stir it under the sugar, egg mixture. 4 Reduce the oven heat to 160C. Pour the filling onto the already baked dough and put it back into the oven for about 45 minutes bake until firm. 5 Let the cake sit to cool down. After that put the whisk the cream until its stiff and put it on top. Finish by decorating it with chocolate flakes. Enjoy
