Close Service
Are you ready to work?
q Uniform neat and clean, name badge, hairnet in place (where applicable)
q © Hands are washed and dried thoroughly whenever they could have
been contaminated, and following the timed handwashing system
(every 30 minutes when working in the kitchen, and hourly when
working front counter, drive-thru and dining area)

q When should pre-close tasks be done? Name three pre-close tasks.
Sometimes it’s possible to carry out some closing tasks before close.
Don’t let these tasks interfere with serving the customers
• Clean and polish stainless steel
• Clean service area surfaces
• Sweep and mop floor

q Cleans and polishes stainless steel. How often do you polish frequently
touched surfaces? Less frequently touched surfaces? How do you polish
stainless steel?
Polish heavily used surfaces daily, less frequently used once a week. Use
McD Liquid Cleanser and a clean, dry cloth. Follow the grain of the
stainless steel

q Cleans the service area surfaces


q © Cleans the dining area
q © Cleans the toilets
q Stocks up for the next day

q Empties and turns off in-counter chiller and returns stock to main chiller
q Turns off equipment
q Records complete waste
q Cleans fryer and fryer prep area
q Removes and cleans fryer filters
q Cleans pie merchandiser, if applicable
q Cleans the hot chocolate machine
q © Cleans drink towers, nozzles and diffusers using 4-step method
q © Cleans coffee machines
q Cleans and sanitises in-counter chiller
q © Checks and cleans shake machine
q Wipes down front counter
q Returns cleaned equipment and utensils to the appropriate area
q © Sweeps and mops floor, including under equipment and stations
q Complete any scheduled daily/weekly cleaning tasks
