Ingredients:
4.Cups your choice(s) of Bobs Red Mill Flours [I used 1:1 whole wheat and white]
1/2TSP Baking Soda
2.TBSP Baking Powder [use one without aluminum]
2 TSP Kosher Salt
12. TBSP Unsalted Butter [melted]
2.Cup Buttermilk [approx]
1.Large Sweet Potato [mashed]
1/2Cup of Sugar for Asian Sweetness [1 Cup of Sugar for European Sweetness]
1.TSP Vanilla
1/2TSP Nutmeg
1/2TBSP Cinnamon
1/3Cup of Walnuts [chopped small]
Optional:
Add a banana into the mix with the sweet potato and a few raisons if you wish.
1st Evolution:
Mix all the ingredients together and gently press into biscuits. If the dough is too
loose you might need to add almost two cups of flour like I did to achieve the
correct consistency. Bake at 350F until golden brown. Serve with butter and
honey for an extra taste treat.
