Pasteurizing purpose:
Pasteurization is a practiced in order to protect milk or other liquid, semi liquid foods and
make it safe for human consumption and to improve the keeping quality of dairy products so that
they will reach the consumer in better physical condition. It also helps to retain the good flavor
of milk or other liquid, semi liquid foods over a longer period of time.
Definition of pasteurization:
Pasteurization is nothing but the killing of all pathogenic organisms by using proper
temperature and time control.
Principle of pasteurization:
Heating the product to a predetermined temperature and holding it for a time sufficient o kill
all or nearly all objectionable organisms which may present.
Methods of pasteurization:
(1) Holding system LTHT : 143F (61.7C) for 30 min.
(2) High temperature and short time (HTST) system : 160F (71C) for 15 seconds.
Materials used in constructing pasteurization:

(2) Glass lining and tinned copper
