Aloo kangmet

Aloo kangmet literally translates as dry mashed potatoes. Deceptively simple, this little concoction is mouth wateringly delicious and helps tide the simple dal affair to something heavenly (for us poor Manipuris who have never understood the need for everyday dal/ cooked lentils of some of our countrymen). Ingrediants: 2 medium potato boiled and peeled 1/2 onion -thinly sliced 8-10 dry red chillies Salt to taste Oil The method: Fry the red chillies till they turn dark brown in a little oil. In the same oil, fry the sliced onion till they are almost crisp.Drain and keep aside (separately). Mash the boiled potato. When cool, mash the fried red chillies, onion and salt. Now, mix this thoroughly with the mashed potato. Garnish with fresh coriander leaves and chives. Serve with boiled rice and dal.
