FRESH PASTA AGLIO E OLIO

Ingredients Fresh pasta (see basic recipe on p.128) 3 tbsp olive oil 6 cloves of garlic, slivered 2 tbsp parsley, chopped Salt and black pepper, to taste Dried red pepper flakes, to taste Parmesan cheese (optional)

Procedure 1. 2. 3. 4. Follow the procedure on how to cook the basic pasta indicated on p.129. In a pan, add the garlic to the olive oil and heat on medium heat until the garlic sizzles. Add red pepper flakes to the garlic to taste. When garlic turns golden brown, add the parsley. After the pasta has cooked 1 minute, add the pasta to the garlic and parsley, allowing some water to fall in the pan this will make the sauce. 5. Season with salt and pepper. 6. Twirl onto the plate and serve with grated Parmesan, if available.
