Hot Cornish Dog fish, mushy peas, tartare sauce

It is always interesting to taste unusual foods. Dog fish is a lesser known species of alternative Cornish fish, that has been used as a bait .If Fish food can become human food, there is nothing more joyous than that for the fisherman who generally has to discard them, because of lack of interest in the market. My dish here is a simple adventure in making a Hot dog make with "Morqui", Cornish word for "dog of the sea" Cook Time: 5 minutes Serves: 4 Ingredients 1 Large hotdog bun, sliced open and toasted 1 Dog fish filet 1 Can green peas(mushed up) Few sprigs of Mint 2 Table spoons Tartar sauce 20ml Olive oil Salt and Pepper to taste 1 Lemon sliced To make this at home: Place the dog fish filets onto an oiled tray ,seasoned with salt and pepper and bake in a hot oven for 5 minutes. Slice the hot dog bun, length wise and toast under a hot grill. Mush the canned peas in a large pan with some fresh mint leaves. Spoon a gentle amount of mushed up peas on top of the hot dog bun, and top with the dog fish filet. Chop the hot dog with a sharp knife into bite size pieces Serve hot with a generous helping of tartare sauce, and lemon.
