Half kg potatoes, peeled and cut into strips Wash the potato strips and drain the water,

then blot them dry with a towel. Put them in a bowl, then add the following seasonings: 4 tbsp sieved gram flour (besan/chickpea) half tsp salt or to taste 1 tsp red chilli powder or to taste 1 tsp red chilli flakes 1 tsp tandoori masala quarter tsp cumin powder quarter tsp turmeric powder quarter tsp garlic paste juice of half a lemon Toss everything together until the chips are well coated with the ingredients. Set aside for 5 minutes. Then give them another toss and fry until almost done. Remove into a strainer. Sprinkle 1-2 tbsp of cornflour onto the fried chips, toss them a little and re-fry them in hot oil for a few minutes until crisp and golden. Remove and drain on some kitchen towels. Enjoy your yummy crispy dry masala chips!
