‘My Filipino Kitchen’ is a collection of everyday Filipino dishes with a short history and its recipe.
Filipino food is a mixture of Asian, Mexican and Spanish flavors brought about by the Philippines’ colonial history and ancient cultural interaction with other Asian neighbors. The dishes featured in this book reflect all these interesting culinary influences.
Nona Lema
Nona Lema was born, raised and lives in the Philippines. She attended Santa Isabel College, University of Santo Tomas and University of the Philippines. She is married with three children and four grandchildren. She has been a vegetarian for many years and her experience in vegetarian cooking has spanned more than thirty five years. During this period, she learned, revised, created and kitchen-tested countless vegetarian recipes with emphasis on regional and traditional Filipino dishes.Over the years, Nona has written many food articles that have been published in magazines, newspapers and in her blog called Home Cooking With Nona Lema. In 2013, she started publishing her Gulay ebooks (a Filipino vegetarian recipebook series). There are now eight ebooks published in that series. The word ‘gulay’ in the Filipino language means vegetables. There are also two books in another series called My Filipino Kitchen.

Introduction
I grew up on traditional Filipino food, having been born and raised in the Philippines. I began learning how to cook simple basic Filipino dishes at the age of 7. Since then for me, our home kitchen has always been a comfort place. Many wonderful dishes are cooked with love and served to the family. A variety of fruits, vegetables, talbos (young leaves), beans, legumes, grains, seeds and nuts are often used in my cooking. And as my interest in food history began, for me every dish is not only tasty but interestingly historical.
This book series is the result of my many enjoyable years spent in the kitchen cooking and tasting everyday Filipino favorite dishes, cooked the vegetarian way. I hope you find them interesting and useful.

Why I`m A Vegetarian
In my long years of teaching people how to cook delicious vegetarian food, I am often asked, Why are you vegetarian?
And I say, I am a vegetarian because I practice meditation. Personally it has helped me a lot in maintaining a healthy, meatless diet for many years. I always encourage people to learn meditation too because it will also be very helpful to them.
Meditation is a very simple and enjoyable relaxation method for achieving inner happiness and self-realization. It goes hand in hand with the vegetarian diet. Through meditation, you will experience not only the meaning of respect for animals’ lives but also the meaning of your own life.
