About this ebook

The book ‘Vegetarian Slow Cooker Soups Cookbook…” was born out of my desire to eat healthy. Over time, I felt the need to help others see the importance of eating healthy.


I preached this message to family and friends and received quite a number of positive responses. Right now, I’ve decided to reach a wider audience and I came up with this book.     … This is the message I’ve been telling some of our friends for a while now and that is what I am saying to you too- take your diet seriously. Go green, go meatless, put your consumption of calories, gluten and fat in check.  It was a decision we had to take at a point in our lives and we discovered that with lots of discipline and determination it is a doable for anybody.

    A vegetarian is not a strange person like the look of some would suggest when they hear I am a vegetarian. Rather it is absolutely a wise choice to make.

    Does it mean only vegetarians and vegan folks need the recipes in this book? Nope. Once a while a non-vegan fellow might crave for a different taste also, then the book comes handy on such occasions.

    50 + meatless and flavorful soups cookbook is a compilation of very healthy soups for vegetarians and for those who love to eat nourishing meals. 

    All the recipes of different soups in this book are vegetarian and vegan. They are carefully written after been tested and proven to help you eat well and still have the delicious taste that you would love to have in non-vegan versions of the recipes.

    Almost all the soups require that you sauté onions and/or garlic in a skillet or saucepan before slow cooking. This is because most slow cookers are designed to cook on very low heat, so, frying in them may not be appropriate.

    Also there is no law to it that onions and garlic have to be sautéed before slow cooking, it is a personal discovery that onions and garlic give better aroma when sautéed in a saucepan than when cooked directly in the slow cooker. So, the option is yours but I advise you follow the tested methods.

    The timing of each recipe is based on the efficiency of your cooker. If you are not used to slow cooking but got one kept away somewhere, you may have to take your time to study how it works. But if you are just going to get one ensure you ask all the necessary questions before you take your decisions. Lastly, for a very neat cooking with little or no mess, use cooker liner always.

    Potato soups

    The nutrition facts about potatoes say it all.

    It is absolutely cholesterol, sodium and fat- free. What else do you want as a vegetarian or a vegan freak?

    When my seven year old son announced to us that he would like to become a professional soccer player, I thought telling that potatoes would become a major part of his meal would scare him away from his dreams but I was very wrong. This young man was resolute. He said to me Mum, I’ll do and eat whatever it takes and I didn’t take his words as a joke.

    I only asked how and what I will have to do to help improve his performance in training as young as he is now.

    I remembered had read a piece about potatoes which explained  that potatoes provide the carbohydrate, potassium and the and the energy needed to perform at the highest  level whether as a sport person or not.

    I decided to give it a trial and sure enough, I was not disappointed. Rather, my son is so energetic and superbly fit that Mr. Jones, the Academy coach, will not cease to talk about his fitness levels. Some may say it’s not just the potatoes, well, I don’t know. But I like to think it helped, a lot.

    The story doesn’t end there; we all just loved potatoes more than ever before.

    Potato soups are regular meals in my home. Like I stated about broccoli earlier, I go for what is relevant health-wise and not just anything.
