Recipe 1. Mutton Potato Chili 319615979
Mutton Potato Chili Curry is a well-cooked preparation of tender boneless mutton pieces and potatoes. The dish is a burst of flavors with the presence of cinnamon and the mutton marinated with cumin and fennel seeds.
Serves 4
Preparation time: 55 minutes
Ingredients:
• Two medium Potatoes, peeled and quartered
• 1 lb. Stewing Mutton, cubed
• Salt to taste
• ½ tsp Cane Sugar
• 2 Bay Leaves
• 1 inch Cinnamon Sticks, whole
• Two medium Red Onions, finely chopped
• Three medium Tomatoes, finely chopped
• ½ tsp Cayenne Powder
• ¼ cup Canola oil
• 1 ½ cups Water
• Chopped Cilantro for garnish
To make the marinade:
• 1 tsp Cumin Seeds
• ¼ tsp Fennel Seeds
• 12 whole dry Cayenne Red Chilies
• Two tsp Coriander Seeds
• ¼ cup Water
• 2-inch fresh piece of Ginger, minced
• 6 Green Cardamom pods, whole
• 4 Cloves, whole
• 8 Black Peppercorns, whole
• Five plump Garlic Cloves, minced
Method of Preparation:
To make the meat marinade:
1. To being with, in a medium-sized bowl, soak the dried cayenne chilies, cumin seeds, fennel seeds, coriander seeds, cloves, cardamom pods and peppercorns in ¼ cup warm water for 15 minutes.
2. After the ingredients become soft, drain the water into another bowl and place the ingredients in a magic bullet or a grinder.
3. Add ginger-garlic paste and 2 tbsp of the spice water and blend into a smooth paste.
4. Now, take a large mixing bowl and add the stewing mutton pieces into the pan.
5. Add the blended spice mixture into the mutton pieces and combine it well mutton pieces. The margination should cover all the mutton pieces adequately.
To make the rest:
1. While, the meat is marinating, heat a heavy bottom pan with canola oil.
2. Add the bay leaves and cinnamon stick into the oil and sauté till you can smell the aroma of the cinnamon stick.
3. Now, add the chopped onions and sauté till the onions become transparent and start to turn brown around the edges.
4. Mix in the tomatoes into the pan and sauté them until they become soft and can be mashed with the onions.
5. Next, pour in the marinated meat and mix well.
6. Sauté the meat for 5 minutes and add paprika powder and salt to the meat and mix well.
7. Remember to stir in intervals as this will help to cook the meat uniformly.
8. Once the mutton pieces start to brown, and it starts to leave the water, place a cover on the lid and let it cook in its juices for another 20 minutes.
9. After that, remove the lid and check to see if the meat has cooked. The meat should become soft and should have lost its raw dark red color.
10. Now, add the potatoes and cane sugar with 1 ½ cups of water and combine well.
11. Place the lid on the pan again and cook the meat over low heat for another 20 minutes or until the potatoes are soft and cooked.
12. The switch off the flame and transfer to serving bowl.
13. Garnish with chopped fresh cilantro leaves.
14. Serve hot with steamed rice or Indian flatbread.

A simple curry, the dish is practically what it means. With twice the amount of onions, it is a favorite amongst the loving onion crowd. The curry is based on tomatoes and yogurt and primarily derives its tastes from the onions and the pure spices.
