    Introduction

    While a vegetarian diet is heavily based on foods derived from plants, there are some variations to it. Generally, such a diet will fall into one of these three categories, based on the individual’s preferences and needs:

    Vegan: Excludes all meat and animal products

    Lacto-vegetarian: Includes typical plant foods in addition to dairy products

    Lacto-ovo-vegetarian: Includes typical plant foods in addition to eggs and dairy products

    The reasons people vary a diet of this nature is to ensure a proper intake of nutrients, namely iron, calcium, protein, zinc and particularly the vitamin B12. Nutrients are plentiful in vegetables and fruit, which make this diet satisfactory for most people. It is also a diet that allows for using the freshest products because of their availability and seasonal output.

    The U.S. Department of Agriculture suggests the following points to consider when a person is converting to a vegetarian diet:

    Get proper amounts of protein

    Keep a calcium source
