Samantha Michaels was born in 1973 in the small town of Abington, PA and was raised and still lives in Hatboro, PA (both suburbs of Philadelphia).  She is married to her high school sweetheart and they have a rescue dog, a beautiful Black Lab named Holly. When she's’not writing or working at her full-time job, she enjoys watching her Philly sports team (hopefully) win, listening to heavy metal/hard rock music, Texas Hold Em, reading, and spending time with friends and family.     So while I haven't tried every recipe from this book yet, I seem to be having the same issue with each one I try... my kids won't eat them. My husband enjoys them. I enjoy some, but not all, as they are a little bland for my personal taste. But the kids, nope, won't even try them. To me, that makes this collection a bit of a bust. Not really bad recipes, just not to our tastes.*I received this book for free in exchange for an honest review.

Introduction

We all know how important it is for our children to eat healthy, the problem is that most children turn their nose up to the foods they should eat and refuse to eat at all unless it is something they like to eat.

To get our children to eat healthy, we must learn to be creative. This can be tricky, but you can actually create some of their favorite dishes and add a few healthy ingredients and they will never know. The main idea is to make the food look exciting and interesting as well as ensure you are using ingredients they like when you create these healthy dishes. The best way to get your kids to eat is to make sure they cannot see the ingredients they do not like in the dish. Our recipes are designed to get kids to eat healthy and even enjoy eating all the foods you want them to eat.

Chapter 1 - Muffins

Strawberry Orange Muffins

Ingredients

3 tablespoons almonds

2 tablespoons all purpose flour

¾ cup all purpose flour

2 tablespoons brown sugar

½ cup brown sugar

3 tsp grated orange zest

½ tsp salt

2 tablespoons canola oil

¼ cup canola oil

1 cup whole wheat flour

2 tsp baking powder

1 tsp baking soda

¾ cup buttermilk

¼ cup orange juice

1 egg

1 tsp vanilla extract

1 ½ cups strawberries 

Preparation

Preheat oven to 400 degrees Fahrenheit. Grease a 12 cup muffin pan. In a food processor, process 2 tablespoons all purpose flour, 2 tablespoons brown sugar, almonds, 1 tsp orange zest, and ¼ tsp salt. Place in a bowl and drizzle with 2 tablespoons of oil and stir. Whisk the rest of the flours, baking powder, baking soda, and salt in a large bowl. In another bowl, whisk the rest of the brown sugar with 2 tsp orange zest, ¼ cup buttermilk, orange juice, vanilla extract, and egg until well blended. Create a well in the dry ingredients and add the egg mixture, stir until well blended. Add the strawberries, stir. Add the batter to the muffin pan, sprinkle with the almond topping, pressing gently. Bake for 18 to 20 minutes until golden brown. Makes 12 muffins.

Banana Chocolate Chip Muffins

Ingredients

3 mashed bananas

1 cup all purpose flour

3/4 cup oat flour

3/4 cup natural brown sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 egg

1/4 cup coconut oil

3/4 cup plain yogurt

1 tsp vanilla extract

3/4 cup chocolate chips

Preparation

Preheat oven to 350 degrees Fahrenheit.  In a bowl, combine all dry ingredients, including sugar, whisk until well blended. In another bowl, using a mixer, blend coconut oil, egg, vanilla extract, banana, and yogurt. Mix on medium speed until well blended. Add the flour mixture and chocolate chips. Stir until blended. Grease the muffin pans. Fill the cups with about 1/3 cup batter. Bake for
