    ¼ cup red bell pepper, seeded and chopped very finely

    1 cup fresh pineapple, chopped finely

    ½ scallion, sliced thinly

    ½ tablespoon fresh cilantro leaves, chopped

    1 tablespoon fresh lemon juice

    Procedure of Pineapple Dip

    1. In a large bowl, add all ingredients and mix well.

    2. Cover and refrigerate to chill for at least 48 hours.

    Calorie Count: 48 per serving.

    Meal 2- Strawberry Salsa

    Introduction:

    This quick, sweet, and little tangy strawberry salsa is perfect as a delicious appetizer at summer family gatherings and parties.

    Preparation time: 15 minutes

    Serves: 2

    Ingredients

    1 cup fresh strawberries, hulled and sliced

    ½ small red onion, chopped

    1 small garlic clove, minced finely

    2 tablespoons fresh mint leaves, chopped finely

    1 teaspoon lime zest, grated freshly

    ½ tablespoon fresh lime juice

    Pinch of salt

    Procedure of Strawberry Salsa

    1. In a large bowl, add all ingredients and mix well.

    2. Cover and refrigerate to chill for at least 30 to 45 minutes.
