    Every adult vegetarian who was raised a carnivore has at least one childhood comfort meal they still pine for... For me, the dish I have shed the most tears missing over the years has unquestionably been my Mom’s amazing tuna potato-stick casserole. I don’t know if she found the recipe on a soup can, or invented it herself, but it was in every way a decadent delight to the senses.

    While most moms were serving up healthy tuna dishes with egg noodles and peas, mine went straight for the junk food jugular – nothing healthy here, just palate-pleasing, salty joy! No pasty noodles, no peas glaring greenily up from your plate, just heaven in a mound of smooshy-crunchy wonderment...

    You can tell I loved the stuff. Since going vegetarian, I have lived three full decades deprived of that succulent goodness...

    Until now, that is! I have at last perfected a 100% vegetarian Mock Tuna potato stick casserole recipe that not only captures the flavor and texture of Mom’s original, it’s super easy to make!

    But even better, the "Mock Tuna" at the core of this amazing 1970's comfort food "remake" has proven an extraordinary vegetarian tuna-replacement in a huge variety of recipes – Mock Tuna sandwiches, salads, burgers, melts, pasta dishes, and even that classic Chinese restaurant appetizer, Crab Rangoon (Mock Tuna Rangoon, anyone?)...
