    Agar-Agar Recipe

    Agar-Agar: Sea vegetable that can be used in place of gelatin in many recipes

    COCONUT ICE CREAM

    Servings: 1 Quart

    In a medium saucepan, use a wire whisk to combine the three 14 ounce cans of coconut milk, two tablespoons of agar-agar flakes, three vanilla beans and 1/8 teaspoon of sea salt. Bring to a simmer, cover and cook over medium-low heat until the agar-agar is completely dissolved, stirring often. Remove from the heat and discard the vanilla beans. Stir in one tablespoon of vanilla extract and one cup of maple syrup. Pour into a shallow pan and cool in the refrigerator for approximately twenty-five minutes, OR until firm. In a blender, combine small amounts of the milk mixture and two tablespoons of melted coconut oil until creamy. Repeat until the remaining milk mixture and oil have been blended. Pour into a bowl and stir, adding additional maple syrup and vanilla if desired. Pour into an ice-cream machine and churn until firm.

    BLUE BERRY & WILD RICE SALAD

    Servings: 6

    Combine one cup of washed wild rice with two cups of vegetable broth vegetable broth. Add enough water to cover by 1 inch in a medium saucepan. Bring to a boil. Reduce the heat and simmer, covered, until the rice is tender, about forty minutes. Let cool. Stir in 1/3 cup of toasted chopped pecans, 1/2 cup of dried cranberries, 3/4 cup of chopped dried apricots, 1/2 cup of chopped red onion. Set aside. In a small bowl, whisk together 1/4 cup of lime juice, two tablespoons of agave nectar, 1 1/2 teaspoon
