HOW TO GIVE A TOSS

Fill a salad spinner bowl, large bowl or clean sink with cold tap water and your salad leaves. Gently move them around to Spin dry. If you don’t have a salad spinner, place two or three paper towels inside a plastic bag with a few handfuls of leaves and whirl the bag over your head a few times. Repeat until the leaves are dry. Cover the bowl of clean, dry leaves with a damp paper towel and chill until ready to use (up to 3 hours) so they remain crisp. Drizzle over your chosen dressing, taking care not to add too much. You don’t want sogginess. Now it’s time to toss. Tongs can bruise delicate leaves, so rather get hands-on. Use your hands to gently toss the leaves, ensuring they’re all well coated in the dressing. You can add a little more dressing if necessary. Plate your salad, using clean hands to gently scoop the leaves onto the plate.
